Heavenly Zucchini Bread Recipe
Zucchini Bread can help you sneak some veggies into your child's diet.
My zucchini plants are growing like crazy in my container gardens and soon I'll have more of these vegetables than I can eat. And so will everyone else in my neighborhood because they're growing their own zucchini. So, giving the excess veggies to neighbors won't be an option. ;)
I use this recipe for great tasting zucchini bread. I make several batches throughout the growing season. Funny, my neighbors refuse the raw zucchini but they will call and ask if I've got anymore of the bread "made up".
The baked bread freezes well and should keep for at least 3 months - but ours never lasts that long.
Ingredients: 3 eggs, 2 cups sugar, 1 cup cooking oil, 2 cups zucchini, unpeeled and coarsely grated, 3 cups plain flour, 1 tsp salt, 1 tsp cinnamon, 1 tsp baking soda, 1 tsp baking powder, 1 cup chopped pecans, 1 tsp vanilla flavoring
Mix all ingredients and pour into greased and floured loaf pans.
Bake in pre-heated 350 degree oven for 1 hour. Makes 2 loaves.
