Cooking Substitutions: Kitchen Hints and Helps

Simple Solutions

How many times have you been cooking only to discover that you didn’t have the ingredients needed? No need to fret because here are some simple solutions that my grandmother taught me that are sure to fix the problem, and they don't begin and end with: a pinch of this and a handful of that. Of course, truth told, she did teach me to make a fabulous pie crust using the terms “pinch” and “handful”. Nonetheless, the nice thing about having solutions is that you probably already have the items in the house and didn’t even know they could be used or combined with other items to create perfect substitutions.

Cooking Substitutions

INGREDIENT

APPLE CIDER VINEGAR
ANY AMOUNT
3 PARTS WHITE WINE VINEGAR TO 1 PART APPLE JUICE
BAKING POWDER
1 TEASPOON
1/4 TEASPOON BAKING SODA AND 1/2 TEASPOON CREAM OF TARTAR
BREAD CRUMBS
1 CUP
1 CUP DRY CEREAL (FLAKES)
BROWN SUGAR
1/2 CUP (FIRMLY PACKED)
1/2 CUP SUGAR AND 2 TABLESPOONS MOLASSES
BUTTERMILK
1 CUP
1 TABLESPOON LEMON JUICE AND ENOUGH MILK TO YEILD 1 CUP
CAKE FLOUR
1 CUP
1 CUP LESS 2 TABLESPOONS ALL PURPOSE FLOUR
CHOCOLATE (UNSWEETENED)
1 OUNCE (1 SQUARE)
3 TABLESPOONS UNSWEETENED COCOA AND 1 TABLESPOON SHORTENING
COCONUT
1 CUP FRESH
1 CUP DRIED (FLAKED) OR 3/4 CUP DRIED (SHREDDED)
CORNSTARCH
1 TABLESPOON
2 TABLESPOONS ALL PURPOSE FLOUR
CREAM OF TARTAR
1/2 TEASPOON
1/2 TEASPOON LEMON JUICE
CREAM (HEAVY)
1 CUP
3/4 CUP WHOLE MILK AND 1/4 CUP MELTED BUTTER
EGGS
NEED 4 - HAVE 3
USE 1 TEASPOON OF CORNSTARCH FOR THE 4TH EGG
FLOUR (ALL PURPOSE)
2 TABLESPOONS
1 TABLESPOONN CORNSTARCH
GARLIC
SMALL CLOVE
1/8 TEASPOON GARLIC POWDER
HONEY
1 CUP
1-1/4 CUP GRANULATED SUGAR AND 1/4 CUP WATER
LEMON PEEL
1 TEASPOON (GRATED)
1/2 TESAPOON DRIED
MILK (WHOLE)
1 CUP
1 CUP SKIM AND 1 TABLESPOON MELTED BUTTER
RAISINS
1 CUP
1 CUP DRIED CURRANTS OR PITTED CHOPPED DATES
TOMATO SAUCE
1 CUP
1/2 CUP TOMATO PASTE AND 1/2 CUP COLD WATER
YOGURT (PLAIN - NON FAT)
1 CUP
1 CUP SOUR CREAM
