Holiday Sweet Potatoes
Easy to Make
One of my favorite Holiday treats are Sweet Potatos or Candied Yams. They grace our Thanksgiving and Christmas table every year. I wanted to pass on this easy- to -make recipe. Enjoy!
Sweet Potato Casserole
Use three or four large cans of sweet potatoes. Drain the juice and place the contents into a large mixing bowl. Add a half cup of margarine or butter. Lightly soften the butter in the microwave before using. Add two cups of brown sugar to your mixture. Sprinkle 1/8 of a teaspoon of cinnamon over the potatoes.Add two large eggs and mix thoroughly. With your electric mixer, remove all lumps. Continue mixing until all of the lumps are gone and the mixture is creamy smooth.
Use a large pyrex dish for your creation. Spray Pam on the bottom of the pan before moving the sweet potato mixture into your pyrex dish. Add pepper as needed.
Smooth the mixture evenly in the pan before baking. Set the oven at 300 degrees and bake for thirty minutes. Ten minutes before the end of your thirty minutes, remove your dish of sweet potatoes from the oven and place large marshmallows over the entire surface, returning the dish to the oven for just a few minutes. Let the marshmallows melt. As your thirty minutes arrives, turn the oven to broil to let the marshmallows get golden brown in color. Remove, cool for five minutes and serve! Yum!
