How To Make A Crisp Grilled Chicken And Mandarin Orange Salad

My Grilled Chicken and Mandarin Orange Salad is crisp and clean, with just the right amount of sweetness from the Mandarin Oranges and paired with the subtle flavor from the lightly seasoned grilled chicken. The salad is light yet filling. You can have it with a meal or on it's own. Or even soup and salad for a light lunch or supper. Either way this salad is a very satisfying meal. Even kids like this salad, especially with the Mandarin Oranges and Raspberry Vinaigrette.
Grilled Chicken and Mandarin Orange Salad:
Ingredients:
** 2 to 3 Chicken Breast ( slightly pounded out )
** Iceberg Lettuce
** A bag of Fresh Spinach
** 1 container Cherry Tomatoes
** 1 Red Onion
** 1 Green Bell Pepper
*** 1 Red Pepper
** 1 Crisp Cucumber
** 1 brick cheese, such as sharp, Monteray Cheese, etc.
** 1 can Mandarin Oranges (chilled ) plus drain well, before adding to the salad.
Feel free to add anything else to the salad that you like, but two many flavors will weigh this salad down. I do however like to add Broccoli sometimes, and the Raspberry Vinaigrette taste great on the Broccoli. Start by slightly pounding out the chicken, then rub Olive Oil on it and season it with Garlic Powder and Black Pepper. I use a George Forman grill for my Chicken. If you don't have one, you can heat olive oil in the fry pan,and then add the chicken and cook till done . Meantime while the Chicken cools, put the rest of the salad toughter. Then slice the Chicken in to thin strips, toss into the salad. I like to use a good Raspberry Vinaigrette, it taste especially good with the Mandarin Oranges, and has a light crisp flavor to the salad. Though you can use any flavor dressing that you like. Grilled Chicken Mandarin Orange Salad is refreshing and a nice healthy salad. This salad is always a hit with the residents at my job, as I am a cook in senior home, and they need to eat lighter and healthier foods.
