How To Make Chocolate Bavarian Cream

Ingredients

Caster Sugar = 100Grams

Egg Yolks = 6

Milk = 250 Mls

Leaf Gelatine = 3

Whipping or Double Cream = 250Mls

Chocolate = 75Grams

Vanilla Pod = 1

Benedictine = 1 and1/2 Tbspns

Method

  1. Make a Sauce Anglaise with the sugar, egg yolks, milk and vanilla pod.
  2. Soak the leaf gelatine in a little cold liquid,drain and dissolve in the hot sauce anglaise immediately, stopping sauce from curdling or over thickening.
  3. Add the benedictine liquor and the melted chocolate to the cooled sauce.
  4. Lightly whip the cream and fold into the cooled but liquid sauce anglaise.
  5. Pour into moulds , chill then demould, decorate with chocolate shavings.
  6. Serve with a small amount of blackcurrants in a blackcurrant coulis, small brandy snapbasket with a quenelle of sorbet.

Notes

  • Adjust gelatine depending on weather conditions (increase to 4/5 sheets in the summer).
  • Not setting, or texture has small lumps (insufficient gelatine, gelatine not fully soaked/dissolved enough).
  • Set too firm/rubbery (excess gelatine used,cream insufficiently whipped).

  • Plastic Spatula/Wooden Spoon.
  • Sauce Pan 2 Pt.
  • Mixing Bowl.
  • Dario moulds x 4.
  • Conical Strainer.
  • Vegetable Peeler (for chocholate shavings).
  • Serving plate/salver
  • Sorbet/icecream scoop.
