Cholesterol causing oils drains right off the chicken when you use the "Stove Top Grill" in the oven; leaving the bottoms crispy. No More Soggy Bottoms!

Leave a little room between each piece of chicken. As you can see on the right, I used a glass pan for my crushed flakes.

I used a ziplock baggie and rolling pin to crush my cornflakes. The larger the flakes the crunchier the chicken.

I already tried the top rack. The middle is the best bet but will take 1-1/2 hours. The top rack will get it done in an hour and very brown. Remember all ovens are not created equal.

  • 3 cups of original cornflakes
  • 2 cups of buttermilk
  • hot sauce
  • paprika
  • pepper
  • garlic powder
  • sea salt

Items Needed

  • 3 bowls
  • Large pan with raised grill to avoid soggy bottom or spray glass or metal pan.
  • Set oven to 400 degrees. Cook time is 1 hour to 1-1/2 hours on middle rack.

Crispy Baked Chicken Instructions

Mix all dry ingredients together and put in one bowl. Mix hot sauce with butter milk in one bowl. Place crushed cornflakes in on bowl. You will be preparing one piece of chicken at a time. You will have to rinse your hands frequently. Do leave a little room between each piece. Use two pans if you must to avoid over crowding.

  1. Wash 2-3 lbs of chicken parts. Breast, legs, or thighs.
  2. Roll chicken if flour and make sure you coal all areas well.
  3. Dip chicken in buttermilk. This will make a paste like coating to hold the cornflakes
  4. Roll chicken in cornflakes on all edges. This is what makes the magic!
  5. Place onto pan leaving enough room to cook evenly on the sides
  6. Repeat until done.

I like to taste the dry flour with seasoning to let me know when I'm finished. You will be tempted to dip the chicken in the wet mix first, don't. Remember to rinse your fingers often to avoid a mess.

I hope you enjoy this crispy oven fried chicken recipe. Hopefully you will convert to this healthier way of enjoying crispy chicken with the fried chicken feeling. Happy and healthy Eating to all!
