Make Perfect Funnel Cakes
This is a how-to on making perfect funnel cakes. They taste great and remind you of the kind you could ony buy at the County Fair.
Recipe for Funnel Cake
Beat 1 Egg with 1 Cup of Milk till frothy
In a separate bowl: Mix together 1 Cup Flour, 3/4 Teaspoons Salt, 2 Tablespoons Granulated Sugar, and 3/4 Teaspoons Baking Powder.
Slowly add the egg and milk mixture to the dry ingredients.
Beat well. Now you're ready to make the funnel cakes!

Heating the Oil
Use a candy thermometer to heat the oil to 350 degrees. If it's any hotter, the batter will burn. (I found this out the hard way). If you have a deep fryer, I think that would be better than a skillet like I used.

Have Your Funnel Ready to Pour the Batter
As soon as the oil reaches 350 degrees, pour about 1/2 Cup of the batter into a small funnel, holding your finger over the opening. The opening of the funnel should not be larger than 1/4 inch. If you don't have a small funnel, you can pour the batter into a large plastic zippered bag with a small hole cut out of one corner.
Hold the funnel over the hot oil and pour the batter into the oil using a back and forth motion. Try to make a lacy pattern. You'll get the hang of it after a couple of attempts. My first ones came together, and looked like a pancake. It takes a little practice!

After the funnel cake has browned on one side, gently flip it over and brown on the other side.
Remove the Funnel Cake
After the cake has browned on the other side, gently remove it and place on the paper towel. I find a large spatula is good for this. I tried using tongs, but the cake fell apart. So, now I gently slide the spatula under the cake and remove it.
Sprinle Confectioner's Sugar over the top, and EAT!
These are really better served while they are nice and warm, I think.
