How to Make Coconut Oil Granola
This is a super easy recipe, and it tastes so good. Not to mention the extra health benefit you get from the coconut oil. It's great for kids also !
- 6 cups rolled oats
- 1 cup slivered almonds
- 1 cup sunflower seeds
- 2 cup coconut chips
- 1/4 teaspoon of kosher salt
- 2 teaspoons of cinnamon
- 1 teaspoon cardamom
- 1 cup coconut oil
- 1/2 cup honey
- 1/2 cup brown sugar
- 2 tablespoons maple syrup
- 2 teaspoon vanilla extract
- 2 cup dried cherries or any dried fruit you like
Set your oven to 350 degrees and line a cookie sheet with parchment paper. In a good sized bowl mix together the sunflower seeds, oats, coconut, nuts, and spices.
Set that aside and get out a 2 quart saucepan. Now melt together the coconut oil, brown sugar, maple syrup, and honey. Once melted, add the vanilla to the pan. Pour this mixture over the contents in the large bowl and mix until coated well.
Pour onto the cookie sheet and bake for 15 minutes. After 15 minutes, stir it well and continue to cook it 10 minutes at a time until it is golden all around.
Let it cool completely, and then sprinkle with the dried fruit and store in an air tight container.
* Cut this recipe in half if you want to make a smaller batch.
