Delicious Stuffed Peppers

It took me a few years to develop an easy recipe to help use up all my garden Peppers. I've tried making stuffed peppers in a large pot on top of the stove, however, I found that it was a hit or miss project. Either the peppers were not cooked long enough or they came out mushy. One day I gave it a try and found out that baking the peppers made them perfectly cooked each and every time I made my stuffed peppers.

This recipe is quick and easy. I put this dish together when my friend recently had to put her mother in a nursing home. Her family was there and I knew she didn't have the time to think about dinner for them. So I called early in the day and told her that I would bring enough stuffed peppers to feed the family. She later wrote me a letter and told me how much everyone liked the peppers and that the days events were so bittersweet because they were spending their last dinner together with their mother before her move to the home.

Once you try this recipe you will rely on it for years to come. It is a great make ahead meal for your family. Stuffed Peppers also freeze well.

When your garden is overflowing with peppers make this recipe and freeze or simply clean the peppers and freeze them for use in omelets, salads, soups or stews.

Ingredients

  • 1 Pound Ground Beef (or Turkey)
  • 6 Cups Rice (Brown or White), Cooked
  • 1 Cup Onions, Chopped or Dried
  • 1 teaspoon Salt
  • 1/4 teaspoon Pepper, Freshly Ground
  • 1 Quart Tomato Sauce, Fresh or Canned
  • 6-8 Large Peppers

Prep time: 30 min
Cook time: 1 hour 10 min
Ready in: 1 hour 40 min
Yields: 6-8 People

Instructions

  1. Precook 6 cups of rice. (OK to make ahead) Wash and Dry the Peppers. Slice in half lengthwise and remove seeds. Place a ladle full of Tomato Sauce in the bottom of a baking dish.
  2. In a large mixing bowl combine the Cooked rice, Raw Ground Meat, Onions and salt and pepper.
  3. Stuff the Peppers with the Meat Mixture. Coat each Pepper with Tomato Sauce. Bake Uncovered in a 350 degree preheated oven for 1 hour and 10 minutes. (Ovens vary so stick a fork in the flesh of a pepper after the first hour of cooking, if the fork does not go in easily then bake for a few minutes longer.)
