Crustless Egg Salad & Cucumber Tea Sandwiches

The crustless tea sandwich meets egg salad and cucumber! This is an easy recipe for toddlers, kids, and adults! Watch my three year old, Julius, as he makes and enjoys these delicious sandwiches.

My mom used to make these sandwiches for us as kids. They are great for breakfast, lunch, or even just an after-school snack. Certainly, mom knows best! I hope you enjoy this recipe as much as we do. ;-)

These sandwiches have also been a huge hit at all types of parties for both kids or adults!

Tips for Preparation

If you have a toddler helper, prepare all of the ingredients ahead of time. Toddlers have a short attention span, so I have everything ready before my toddler starts cooking.

  • Eggs - Place eggs in boiling water for 15 minutes. Remove eggs to a bowl of ice water for 5 minutes or until completely cooled. Peel and dice eggs.
  • Cucumber - Peel & dice cucumber. For your convenience, a how-to video is listed to the right. I completely remove the skin from the cucumber for toddler recipes.
  • Mayo - Try putting the mayo in a zip lock baggy with one end snipped and let your toddler squeeze the mayo out...or they can spoon it from a cup.
  • White Bread - Remove crusts of white bread using a pizza cutter. Super easy! Note: Save the crusts for homemade bread crumbs. Put them in a blender & then freeze in an airtight container.

It's ok if you make a mess. ;-)

A fun moment in our video is when Julius accidentally splashes mustard in his hair. He is so upset, but the show must go on. LoL - When cooking with a toddler helper, or by yourself, it's ok if you make a mess. ;-)

Yields: 2-4 Sandwiches

Ingredients

  • 4 Eggs, Hard Boiled
  • 3 Tbs Cucumber, Peeled & Diced
  • 1/4 Cup Mayo
  • 1/2 Tbs Mustard
  • Squirt Honey
  • Pinch Salt & Pepper
  • 1/8 Tsp Paprika
  • Dash Dill
  • 4-6 Slices White Bread

Easy Instructions for Crustless Egg Salad & Cucumber Tea Sandwiches

  1. Prepare the eggs, cucumber, mayo, and bread as described above. Note: hard boiled egg instructions - you can follow my instructions or those in the video above. Both options will provide good results.
  2. Add the first five ingredients to your mixing bowl, including: eggs, cucumber, mayo, mustard, and honey. Stir the ingredients until thoroughly combined. Add the following four seasoning ingredients to the egg mixture, including: salt, pepper, paprika, and dill. Stir again until thoroughly combined.
  3. Assemble the sandwiches by adding two to three tablespoons of the egg salad mixture to your bottom piece of crustless bread. Next, top your sandwich with the remaining piece of toast. Cut the sandwich into four squares and enjoy! - Ideas for additional toppings are listed below.
