Strawberry Pancake Muffins With Syrup

A healthy and kid friendly breakfast recipe ; strawberry pancake muffins with syrup. The great part: Leftovers are freezable! This is a fun way to get your child involved in the cooking process. They will love being mommy or daddy's little helper. Plus, they will become more interested in the foods that you are serving.

For picky eaters, serve the strawberry syrup on the side as a dipping sauce.

Note:

In the above video, we mixed all the ingredients except for the strawberry puree, which we saved for last. However, to save time, you can mix the strawberry puree with the other ingredients just the same. Adding the puree along with the other ingredients will not affect the texture or taste. Just remember to taste the batter after it's completely combined for sweetness. Add more sugar, a tablespoon or two at-a-time, if your batter is not sweet enough.

Cook Time

Unfortunately, I did not log how many muffins this recipe made so I am unsure on the servings. The great thing is that you can save the leftovers for a quick breakfast or treat throughout the week.

Prep time: 5-10 minutes

Cook Time: 20-25 minutes

Muffin Ingredients

  • 2 Cups Baking Mix, (Bisquick)
  • 1/2 Cup Milk
  • 1 Egg, Scrambled
  • 2 TBS Brown Sugar
  • 2 TBS Syrup
  • 1 TSP Vanilla
  • 1/2 Cup Strawberries, Puree

Insructions

  1. Set your oven to 350 degrees Fahrenheit. Pour all the muffin ingredients in a mixing bowl.
  2. Stir the ingredients together until thoroughly combined. Taste the batter to make sure it is sweet enough. Add more sugar to your liking.
  3. Use a melon baller to distribute the batter evenly in a mini muffin pan. Place on a center rack in the oven for even cooking.
  4. Cook for 20 - 25 minutes. The muffins are done when they are golden brown around the edges. - Next, see the strawberry syrup recipe below.
