When having a salad for lunch I prefer to make my own Potato Salad and Coleslaw Recipes.

A cold lunch is very handy to make when I have visitors coming over and they always appreciate the extra effort I make. All the homemade food goes into bowls on the table and they help themselves to a delicious meal.

When we are going out for the day the same potato salad can be put into containers. The coleslaw, fillings of cheese or meat can be put on bread or buns to make great picnic food. This makes for a quick, easy and cheap meal.

In this article I am concentrating on the method and instructions for making a Potato Salad.

Preparation and Cook Time

Yields: Gives 10 portions

Ingredients for Potato Salad

  • 3 large potatoes
  • 6 scallions or spring onions
  • Bunch of parsley, Fresh or dried
  • 1/2 jar of mayonnaise
  • 1 ounce of butter
  • Salt and Pepper

Chop the fresh parsley into small pieces

How To Make Potato Salad

  1. Peel and wash the potatoes. Cut into small pieces and boil until they are soft when pierced with a knife. Remove from the cooker and drain out the water.
  2. While they are still hot add the butter in small pieces and allow to melt.
  3. Prepare the scallions or spring onions. Cut off the root end making sure to keep as much of the bulb as possible. Wash under the tap. Cut into very small pieces. Make sure you use both the bulb and the green storks
  4. If you have fresh parsley then cut off some storks and cut them up into small pieces. It is not always possible to grow or buy fresh parsley so the dried herb will do. But to be honest it really does not taste anywhere nice as fresh.
  5. Go back to your potatoes. Mash them up with a fork. but not too much. You do not want them completely mashed. Small lumps of potato as well as smooth mash is your aim.
  6. Add the scallions or spring onions and the parsley to the potatoes.
  7. Mix in gently with the fork. Add most of the parsley and do the same. Salt and pepper can now be thrown in too if required
  8. Use a large spoon to throw in the mayonnaise and blend in gently
  9. Leave in the fridge for at least an hour but longer is better. When you are about to serve cut some sprigs of fresh parsley leaves and place them on top of the bowl.
  10. Enjoy your wonderful cold potato salad

Easy Coleslaw Recipe

I have never bought coleslaw in the shops that can beat my homemade version.

This is because the ingredients are all fresh and I know it is made hygienically by myself.

The beauty of making your own coleslaw is that you can add only the ingredients that you like to eat. It is very easy to make and convenient because normally you would have the vegetables already in your pantry.
