Easy Chicken Salad Recipe With Grapes and Apples

This is a recipe I make for parties, football parties, kids parties, adult parties, potluck parties, work parties - yep you name it. I also make it at home for a quick, easy meal alongside a hearty pot of soup or chips. No matter where I make it or who I make it for, it gets eaten up. I often get asked for the recipe while full mouths are enjoying it, so I thought I would just share. Believe it or not, I thought up this recipe one day taking out my frustration on Arby's and the fact that they took away one of my favorite Market Fresh Sandwiches that was like it. It has a salty and sweet combination, with the perfect kick.

What You'll Need

  • 2 cans white chicken, drained and shredded (such as Chicken of the Sea or Swanson's)
  • 1/3 c. Mayo
  • 3 tsp. of white sugar
  • 2 tbsp. Red Wine Vinegar
  • 1 Apple, cored and diced
  • 1 c. grapes, cut in half

In a small bowl, combine chicken and mayo. Add your apples and grapes. Gradually add in sugar, tasting along the way to your liking. Mix in the red wine vinegar. Mix all together until well-combined. Serve on your favorite sandwich bread.

Variations

Now of course, there are many variations that you can create with this recipe to suit you. All of the above ingredients should be tried out or tasted along the way(which I am sure most of you won't mind) to suit to your taste. Sometimes I may just use apples, or grapes. Walnuts or pecans make it a tasty add-in variation. I may add in celery or raisins. I may put a couple slices of lettuce onto my bread. The possibilities are endless and up to you. I make the above variation most of the time on sliders for get-togethers and parties and I have yet to find a single person who does not like it. If you are a fan of chicken salad, try this version out and see if you like it. I hope it does not disappoint!

Interesting recipe. What type of bread do you prefer to use to accent your chicken salad? Have you ever tried making it with cranberries? There are so many variations of chicken salad compared to the other two in your poll.

I am simple and mostly use whole wheat or grain bread. Yes, there are a TON of variations and they are mostly all delicious. I did the poll to see what others like because I have come across some who just plain do not like chicken salad altogether, so on and so forth.
