How to prepare a cooking powder for Essential Recipe

SAMBAR POWDER

INGREDIENTS

Red chili – 2 cups

Dhania – 4 cups

Chana dhal – 1 cup

Tuvar dhal – 1 cup

Black pepper – 4 tsp

Cumin seeds – 4 tsp

Fenugreek seeds – ½ cup

Mustard – ½ tsp

METHOD

Dry roast all the ingredients separately and powder it.

IDLY POWDER

INGREDIENTS

Urad dhal – 1 ½ cups

Gingely seeds – little

Bengal gram dhal – 1 cup

Red chilies – 5-7

Curry leaves – few

Horse gram – 1 tbsp

METHOD

·         Dry roast all the ingredients and powder. Add salt to taste.

·         Note – can include 4 garlic pods(slightly roasted without oil)with skin

·         To increase flavor and digestion

SAMBAR POWDER TYPE 2

INGREDIENTS

Coriander seeds – ½ kg

Urad dhal – 100gms

Dry chilies – ¼ kg

Tuvar dhal – 200gms

Fenugreek seeds – 10gm

Bengal gram dhal – 200gms

Cumin seeds – 200gms

Raw rice – 100gms

Ani seeds – 50gms

Turmeric – 40gms

Poppy seeds – 100gms

Pepper cons – 10gm

METHOD

· Dry roast all the ingredients and powder them.

· This powder can be used for making sambar, puli kozhambu, vegetable korma, non-vegetarian curries etc. To be more specific where ever sambar powder is referred in this book.

DRY MASALA POWDER

INGREDIENTS

Coriander leaves – 50gm

Curry leaves – 50gm

Garlic pods – 50gm

Mint leaves – 50gm

Methi leaves – 50gm

METHODS

Wash and dry all the leaves under the sun when fully dry powder them and store in air tight container

Add one teaspoon of dry masala powder to any cooked vegetables or dhal to increase flavor.

RASAM POWDER

INGREDIENTS

Cumin seeds – 100gms

Dhania – little

Red gram dhal – 50gms

Pepper cons – 50gms

Dry red chilies – 10

Asafetida – little

METHOD

Dry roast all the ingredients and powder it.

GARAM MASALA POWDER

INGREDIENTS

Cumin seeds – ¼ cup

Cardamom – 20

Pepper corns – 25

Bay leaves – 5

Dhania – ¼ cup

Cinnamon stick – 3” long

Cloves – 15

METHOD

·         Powder all the ingredients raw. Break cinnamon into very small pieces and then grind.

GINGELY SEED POWDER

INGREDIENTS

Asafetia – 1/2tsp

Urad dhal – 1 cup

Gingely seeds – 1 and ½ cups

Red chilies – 6-8

Salt – to taste

METHOD

·         Dry roast all the ingredients without oil and powder them together.

·         This powder can be used over boiled rice with little ghee or coconut oil.

MASALA POWDER FOR BAJJIS AND SALADS

INGREDIENTS

Cumin seeds – ¼ cup

Dry red chilies – 5

Mint leaves(dried) – few

Dhania – ¼ cup

Pepper corns – 10

METHOD

·         Dry roast cumin seeds, dhania, and dry chilies. Powder them.

·         Powder pepper cons, mint leaves and mix all powders.

·         This powder can be mixed with curd and added to any cut vegetables while making salads.

·         Sprinkle this powder after sqeezing little lime juice on any type of bajjis. It really makes bajjis simply super.
