This is a simple and delicious recipe for a pesto summer salad.

Hey pesto


2  large handfuls of basil leaves

1 peeled clove of garlic

2 table spoons of pine nuts

3 tablespoons of parmesan/romano

1 table spoon olive oil


If you like your pesto authentc then you need to use a motar and pestle and some elbow grease to grind and pound the above ingredients into a pulp

otherwise cheat and use a food processor the flovours do not mingle as effectivily but it is quick


Marinate some chicken breasts in the pesto a table spoon of brown sugar and 1-2 table spoons of balsamc. Marinate at least 2 hours or overnight


Cook the chicken breasts in a pan on the stove or in a BBQ until they are firm. If I am using a pan I put glad bake in the bottom and cook on that with the lid on... fast and clean! Allow them to rest before you eat them at least 5mins under foil

Create a dressing:


Juice one lemon

1 tablespoon of caster sugar

1 chilli deseeded

1 clove garlic


Place in saucepan and heat until flavours infuse. Allow to cool before use



lettuce leaves

Tomtoes(I like minature ones cut in half)

Capsicum which has been roasted

cooked chicken breasts cut into pieces



add all ingredients to a bowl and toss.

Eat and enjoy!!
