If You Have a Pound of Ground Beef, You Have Dinner
It is dinner time. You have a hungry crowd and no idea what to fix and it needs to be quick before they start eating the silverware.
Following are some ground beef recipes we enjoy in our family. You can use ground turkey in these recipes instead of ground beef for a bit of a healthier dish. Your family will not know the difference. I promise.
Potato and Ground Beef Casserole
Line bottom of baking pan with a bag of frozen hash browns or shoestring potatoes.
Mix can of cream of chicken soup with a can of cheddar cheese soup and a little bit of milk. Mix in browned ground beef. This recipe is also great with ground sausage or half beef and half sausage. Pour over potatoes. Top with shredded cheese. Bake at 350° until cooked through and bubbly.
Beans and Rice
Cook rice. Set aside. Brown ground beef with onion and pepper. Drain. Add package of taco seasoning. Pork sausage works well in this recipe or a mix of ground beef and sausage. Mix with cooked rice. Add 2 cans of chili beans drained, 2 diced tomatoes, a can of corn niblets drained and rinsed. Put in a casserole dish. Top with pepper jack cheese. Bake until cheese is melted.
1 lb ground beef
Approximately 2 cups dry oats or breadcrumbs or crushed crackers
Salt and pepper to taste
Small onion, chopped
½ to ¾ cup tomato sauce or ketchup
Muenster or Provolone cheese slices
Mix ground beef, dry oats, eggs, onion, salt, pepper, tomato sauce or ketchup. Put a layer of meatloaf in bottom of pan. Lay slices of Muenster or Provolone cheese on top. You can also put a layer of spinach in the middle with the cheese or by itself. Cover with rest of meatloaf. Top with more tomato sauce or ketchup. You can put uncooked strips of bacon across the top of your meatloaf instead of the tomato sauce or ketchup.
Bake in 350° oven for 35 to 40 minutes or until brown and bubbly.
Quick Veggie Soup
Brown a pound of ground beef. Drain. Mix in with two cans of tomato soup and enough water to make your desired consistency. Add a bag of frozen mixed vegetables, any variety will work. I like the broccoli, carrots, and cauliflower. When veggies are almost cooked through, stir in shaped pasta. Serve with a sprinkle of Romano cheese on top.
Ground Beef Casserole
Brown ground beef with small chopped onion. Drain. Set aside. Lightly grease casserole dish.
Slice three potatoes. Slice three carrots. Put sliced potatoes and carrots in casserole dish. Add a can of drained peas. Add browned ground beef. Cover with mozzarella cheese. Top with a can of tomato soup. Bake for one hour in preheated 350° oven or until potatoes and carrots are tender.
1 pound ground beef
2 baking potatoes, thinly sliced
1 -2 cups frozen green peas according to your tastes
1 can of cream of mushroom or cream of chicken soup
½ cup grated cheddar cheese
Brown the beef in a skillet. Drain. Set aside. Cook potatoes in boiling water for five minutes. Drain. Combine beef and potatoes in casserole dish. Add frozen peas. Stir in soup. Sprinkle cheese evenly over top. Bake in a preheated 350° oven for 30 minutes.
Bacon Cheeseburger Pie
1 pound ground beef
Small bell pepper
6 pieces fried bacon
1 can of cream of chicken soup
¼ cup ketchup
8 ounce package of cream cheese, softened
½ cup milk
Brown ground beef with onion and bell pepper. Drain and set aside. Fry bacon. Drain and set aside.
Mix soup, milk, ketchup, and cream cheese. More ketchup can be used to suit your tastes. Add beef and crumbled bacon to soup mixture.
Bake in 350° oven 30 minutes or until bubbly. Take out of the oven. Sprinkle with shredded cheese. Put canned biscuits on top of cheese covered casserole. Bake until biscuits are browned.
Mama Sue's Sausage and Beans
My boss' recipe calls for a pound of pork sausage. Ground beef would work or half ground beef and half sausage would work as well.
Brown the pound of meat with one chopped onion. Drain. Add two cans of pinto beans and one large can of chopped tomatoes, not drained. Simmer. Mixture will be thick. Serve over egg noodles or rice or with a chunk of cornbread.
Egg Noodle Bake
Brown a pound of ground beef with one chopped onion and one chopped bell pepper. Drain. Pour beef over cooked egg noodles in a casserole dish. Smother with cheese. Add chopped tomatoes and add more cheese. Bake in a 350 degree oven until the cheese is melted through. This is awesome served the next day.
