Mint sauce and feta cheese sandwiches
These sandwiches are different, all homemade and healthy.
The sandwiches provide -carbohydrate, fibre, protein, anti-oxidants
Mint as a herb improves digestion and skin tone while cilantro acts as an anti-febrile agent.
Begin with preparing the mint sauce-
Ingredients- fresh mint (4-5 sprigs), fresh cilantro (4-5 sprigs), 1/2 tsp of cumin seeds, 1/2 tsp salt, 1tsp sugar.
Blend all the above ingredients to a smooth paste in a coffee mill or osterizer.
For the sandwiches -
White or whole wheat bread slices (4-6)
Finely chopped iceberg lettuce or water cress
1. Apply cream cheese to the one side of each slice. Apply mint sauce with a spatula. Crumble feta cheese or layer thin slices of feta cheese. Add a layer of finely chopped iceberg lettuce. Place the other slice with cream cheese on top.
2. Trim the edges of the sandwich and cut into 4 triangular bite size sandwiches.
Note - adding chopped chives and finely chopped black olives adds extra zing to the taste!
