Italian Meatloaf

Italian Meatloaf

1.5 Lbs Ground Beef

3 oz Pancetta Thin Sliced

1 cup of bread crumbs

1/3 Cup Tomatoe Sauce

1/2 cup Parmesean

3 Tablespoons Parsley

3 Tablespoons Oregano

1 Egg

2 Tablespoons Minced Onion

1 Tablespoon Crushed Red Pepper

1 Teaspoon Cumin

1 Teaspoon Black Pepper

In a Large bowl, combine the ingredients except the pancetta. Mix with a large spatula dipped in olive oil until the ingredients are blended well.

Now, line a loaf pan with the pancetta, try and get a pretty good layer over the bottom and sides of the pan, the grease in the pancetta will serving as a lubricant as well as a tasty ingredient in this dish. Line it well so the ends are covered, now pack the combined ingredients from the bowl into the pan so they fit snugly in the pan.

Now that your meatloaf is ready to cook. Get a cookie sheet, grease it, and turn the loaf pan upside down on top of the sheet, the meatloaf will slide onto the pan. Now cook on 450 for 30 minutes. This meatloaf goes great with breadsticks, especially my Best breadsticks recipe! ;)

Sounds like meatloaf on steroids! Awesome idea I will be trying out soon! Definitely a refreshing change to the boring meatloaf you can get at some of the local restaurants.

Thank you very much for this great idea!

I don't do much cooking due to work/college schedule, but I like to experiement a little. I wrote a couple of hubs about some things that I gave a few ...International 'kicks' to. It used to drive my mother in law crazy when I was adding cinnamon to her pumpkin pie filling and vanilla to the crust.

Sometimes I also write down the ingredients/recipes for food I see in restaurants/junk food places and try them out or experiement with them a little.

A good meatloaf is a wonderful thing, but most are too dry or you have to add mustard or such to it to give it taste. This sounds awesome and I will definitely try it out soon!
