Cranberry Jello Delight
Easy to Make
Jello salads are my favorite in the winter months. Lettuce is available, but is expensive and not as robust and appealing. With a few simple ingredients and some refrigeration, you have a welcome additon to any meal.
My Mother In Love made this gelatin salad for our Thanksgiving dinner. She has had the recipe for years. Your family will love it.
Dissolve l large package of raspberry flavored gelatin in 2 cups of boiling water. Add l cup of cold water. Chill until partially set. Stir in 1 and 1/3 cups drained mandarin oranges, 1 cup drained, crushed pineapple, 2 cans (l lb. each) whole cranberry sauce and 1/3 cups finely chopped pecans. Be sure that the pineapple and mandarin oranges are drained well to avoid a watery mixture. Pour into a mold or pyrex dish and chill unto firm. This salad will serve 16 people.
Though the salad is delicious by itself, add a topping of sour cream or mayonnaise if you like. This salad provides color for your Holiday meal. It will compliment ham, turkey, or chicken. Enjoy!
