Carrabba's Italian Grill Restaurants

Carrabba's Italian Grill is a USA nationwide chain of Italian restaurants. The menu features classic Italian dishes. Many of the recipes are featured on the PBS cooking show called 'Cucina Sicilia', hosted by the original owners of the first Carrabba's Italian Grill restaurants.

Just Like Carrabba's Sangria Recipe

  • 1 bottle Scarlatto red wine

  • 1 cup Monin red sangria mix

  • 5 ounces brandy

  • 2 1/2 cups fresh orange juice

  • 1/4 teaspoon cinnamon

Mix all together and enjoy a drink just like Carrabba's sangria at home.

I made Carrabba's Chicken Marsala last week, and it came out great. There are two recipe's I found, and one was too vague, and left certain items out that made me know it would not taste right. The other was the right one, it has a small amount of lemon juice, and you start with browning diced Proscuttio in butter to get the Marsala sauce started. I also added a little rosemary to it.

There was enough for 5 people, and every single one of them loved it. It will be my Christmas dinner this year.

A long time ago Carabbas made the best roasted potatoes and was were served with Sirlion Marsala and Chicken Bryan. It probably was a side dish for other entrees.

Your Sangria recipe is way off, horrible. Carrabas uses Korbel brandy, red wine, orange juice and a splash of grenadine. Sangria mix? oh brother.

I work at carrabba's and the lemon butter recipe is the same sauce they use in the shrimp scampi..you just add some herbs and some garlic toast.

Lemon Butter Sauce (Carrabba's)

2 tablespoons clarified butter (you'll need about 1/2 stick butter; directions follow)

2 tablespoons finely chopped yellow onion

2 tablespoons finely chopped garlic

6 tablespoons fresh lemon juice

2 tablespoons dry white wine

kosher salt

white pepper

2 tablespoons cold butter

To clarify butter; melt 1/2 stick butter over low heat. When melted, remove from heat, and set aside for several minutes to allow the milk solids to settle to the bottom. Skim the clear (clarified) butter from the top, and discard sediment. (This can be done ahead.)

To make sauce; Heat clarified butter, add onion and garlic, and sauté until transparent. Add lemon juice and white wine, and season to taste with salt and pepper. Simmer 2 to 3 minutes to reduce liquid. Remove from heat and swirl in cold butter until sauce is smooth and mulsified.

Warren's notes-- I think these have too much lemon in them. Experiment until you either have them like Carrabba's or as you like them.

We had a hard time getting this recipe, since the Carrabba's folks guard it pretty seriously. Then, about six months ago, the San Antonio Express News got a hold of the recipe and published it in their paper and on the internet.

I called Carrabba's and they told me what was in their Italian dressing and it was so complex I almost didn't get it all written down. As far as I heard it was salt, garlic, red onion, egg, basil, red bell pepers, red wine (actual wine she said) olive oil, romano cheese and I think she also said red wine vinegar

I work at a Carrabba's as botha bartender and server. All of our Sangria recipes (white, red, and blackberry) call for a Monin Sangria Mix which can typically be found at local World Market stores (along with our martini shakers which are super cute). The Lemonfresca someone asked about uses half a lemon, an orange slice, 2 mint sprigs which are muddled with 1.25oz of Monin pure cane syrup. Then you add 1.25 Ketel One Citron, .75 oz Lemoncello liquer and about 2 oz each of sprite and soda water. Enjoy

Buxton: I found this recipe for Pollo Rosa Maria on a news web site. Presumably they got it from an actual Carrabba's franchise in their area.


Pollo Rosa Maria

(Yields 2 servings)


2 chicken breasts, boneless, skinless and butterflied

4 slices prosciutto ham

4 slices Fontina cheese

2 Tbsp. fresh basil, chopped

4 Tbsp. butter, divided

6 mushrooms, sliced

1 small onion, chopped

1/2 cup fresh garlic chopped

1/2 cup white wine

1/2 cup fresh lemon juice

White pepper to taste

Kosher salt to taste


Cover one-half of each breast section with one slice of prosciutto ham, one slice of Fontina cheese. Fold chicken breast half flap over the dressed chicken breast half; season with grill seasoning. Grill and baste until cooked. In a sauté pan place 1 Tbsp. butter, sauté mushrooms and onions and garlic until softened. Add white wine and lemon juice; simmer approximately 10 minutes on medium-low heat to reduce. A little at a time, add remaining 3 Tbsp. butter until butter melts and mixture emulsifies, add basil. Place lemon butter mushroom basil sauce on top of the Rosa. Serve with pasta.

Recently ate at Carrabba's in Augusta, GA. We had sea bass "sandwiched" between two pieces of very crispy hash browns. A mustard cream sauce (with mustard SEEDS) was ladled over the dish, and that's the recipe I'm looking for---the mustard cream sauce.
