Khichdi- the comfort food
Khichdi is a famous dish in India.. It is easy to cook and is often known as the comfort food. You can eat it with kadhi or steamed potatoes http://dipsmi.hubpages.com/hub/Steam-cooked-potatoes-Aaloo-Dum
Ingredients
- Bay leaf 2
- Peas 1/ 2 cup
- Cloves 3
- Cumin seeds 1 tsp
- Rice 2 cup
- Split red lentil (masoor dal) 2 cups
- Split Bengal gram 2 tsp
- Turmeric powder 1 tsp
- Ginger garlic paste 1 tsp
- Green pepper chopped as per taste
- Onion 1 cup chopped
- Curry powder 1 tsp
- Salt as per taste
- Carrot 1 chopped
- Baby potaoe 2-3 optional
- Water 7-8 cups
- Oil/ Clarified butter 6 tsp
- Cilantro for garnishing
Method
- Soak rice, split red lentil and Bengal gram for 30 minutes before cooking.
- Heat clarified butter or oil on pan.
- Add bay leaf, cloves and cumin seeds.
- Add pepper and ginger garlic paste, mix well.
- Add all the spices and mix well.
- Add onion and mix it with the spices. Let it cook for 2 minutes.
- Add the potatoes and mix it well.
- Add carrot and peas and mix well.
- Add all the lentils and rice.
- Cook for 5 minutes.
- Add water and stir slowly.
- You can add milk to make it more creamy.
- Increase the measure of spices if you want it more spicy.
- Cook till 3 whistles if you are cooking in a pressure cooker.
- If you are using a pan then cook for 15 minutes.
- After it is done, pour a spoon of clarified butter.
- Garnish it with cilantro and serve hot.
- You can eat it with pickle.
