This easy STIR FRY BEEF WITH ASPARAGUS IN OYSTER SAUCE Recipe is another one of my favourite easy stir fry recipes. This recipe is simple and very easy to do. This easy stir fry beef recipe is delicious and nutritious too, plus this stir fry beef is low calorie.

Asparagus alone is rich in protein but low calorie and low in carbohydrates. It is an excellent source of potassium, folic acid, vitamins A, C and K, and traces of vitamin B complex. A good source of dietary fiber, asparagus is also rich in niacin, phosphorus and very low sodium. Asparagus is one of the few vegetables that is highly dense in healthful nutrients that help many ailments such as relieving arthritis and rheumatism, and preventing cancer and heart disease.

Now let me explain some of the ingredients that you might not be familiar with.

Oyster Sauce

In cooking Chinese foods, you should always have a bottle of oyster sauce. Oyster sauce is a special brew of oysters, soya sauce and spices and most contain modified cornstarch as a thickener. Oyster sauce gives a unique flavour and often used in Chinese cooking.You can get it in most Chinese and Asian markets or, even in your local grocery stores in the soy sauce shelf.

Ginger root

The fresh ginger - not the dried powder - is mandatory in Chinese cooking. Like garlic, its spicy fresh flavour and aroma is indispensable to the flavour of Chinese food. It's widely available and good for you. Recent studies suggest that ginger helps to purify the blood and lower cholesterol. When buying, look for "hands" that are plump, heavy and free of blemishes. Young ginger, which is cream coloured, without the usual bronze skin, is milder and available in season. Both types will keep, refrigerated, in airtight container, for 2 weeks.

Szechuan peppercorns

These are actually not peppercorns (which are seeds), but dried reddish-brown berries of fagara, a relative of the prickly ash. They have a spicy, complex, slightly numbing flavour, and are among the most ancient seasonings used in Chinese cooking. For best results, toast them in a dry skillet before using. They're available in Chinese and Asian markets.


Cooked Rice (Optional)

Most Chinese foods are eaten with rice but rice adds calorie to your meal. So for low calorie diets, do not include rice.

Easy Stir Fry Recipes - Beef with Asparagus in Oyster Sauce Recipe

Ingredients:

  • 1/2 tsp black peppercorns
  • 1/2 tsp Szechuan peppercorns or green or red peppercorns
  • 2 tbsp oyster sauce
  • 1 tbsp soya sauce
  • 1 tbsp chicken stock or water
  • 2 tsp cornstarch
  • 2 tbsp vegetable oil
  • 2 tsp minced ginger root
  • 2 tsp minced garlic
  • 1 small onion, sliced
  • 12 oz flank steak, thinly sliced across the grain
  • 1 lb asparagus, cut into 2-inch segments


Combine peppercorns. Coarsely grind in a pepper grinder, mortar and pestle, or by crushing with a wine bottle between two sheets of waxed paper.

In a small bowl, combine oyster sauce, soya sauce, chicken stock or water and cornstarch. Mix well until cornstarch is dissolved. Set sauce mixture aside.

In a large nonstick skillet or wok, heat 2 teaspoons oil over medium-high heat for 30 seconds.

Add ginger root, garlic and onion. Stir-fry 1 minute or until fragrant.

Add beef and cook, stirring to separate pieces, about 2 minutes.

Season with mixed peppercorns.

Add asparagus; toss to mix and cook 2 minutes.

Add sauce mixture; stir and cook until thickened

Transfer to a serving platter and serve immediately.

Serves 4.

  • 1 cup medium-grain white rice approx 242 calories
  • 1 cup long-grain white rice - approx 205 calories in 1 cup.
