Roast Beef Recipes
Chuck Roast
There are many different cuts of roast beef. My favorite is the chuck. It comes from the neck and shoulder and to me it is the one that has the best flavor. Not only that, it is also one of the less expensive cuts of beef.
The best way to cook this cut of beef is by slow cooking. I usually cook it on the top of the stove or in a crock pot.
This type of roast lends itself nicely to be used in many different types of recipes. I have included some of my families favorite recipes for your eating enjoyment. Hope you like them.
Roast Beef Hash
1 small onion, chopped
4 - 5 potatoes, chopped
2 cloves garlic, minced
2 1/2 - 3 cups leftover roast beef, chopped
1 tsp salt
1/2 tsp black pepper
1 pkg brown gravy mix
1 cup water.
Directions:
Blend gravy mix and water until smooth and pour into soup pot.
Add rest of ingredients and bring to boil.
Cover and simmer for 20 - 30 minutes or until potatoes are tender.
Especially good served with crusty french bread.
Roast Beef Soup
Ingredients:
1 cup onions, chopped
1/2 cup green pepper, chopped
1/2 cup celery, chopped
1 (16 oz) bag frozen mixed vegetables
1 1/2 - 2 cups leftover roast beef, chopped
1 can diced tomatoes
1 small can chopped mushrooms
4 (10 1/2 oz) cans beef broth
2 cups water
2 cups cooked noodles
Directions:
Place all ingredients in a soup can except for cooked noodles and bring to a boil.
Cover and simmer on medium low heat for 1/2 hour.
Meanwhile, cook noodles according to package instructions.
Add noodles and simmer for another 1/2 hour.
You will love vegetable crackers with this soup.
Beef and Noodles
Ingredients:
1 cup carrots, chopped
1 cup celery, chopped
1 cup onions, chopped
1 clove garlic, minced
2 cups leftover roast beef, chopped
1 can (101/2 oz) beef broth
1 envelope brown gravy mix
1 envelope onion soup mix
1 cup water
1 pkg noodles
Directions:
Place all ingredients except for noodles in a large pan and bring to a boil.
Turn down heat to low and simmer for 1/2 - 3/4 hour or until carrots start turning tender.
Meanwhile prepare noodles according to package directions.
Add noodles and simmer for another 1/2 hour.
This recipe is good served with crusty french bread and a side of fresh green beans.
Leftover Roast Beef Casserole
Ingredients:
2 cups leftover roast beef, chopped
1/2 cup onion, chopped
1/3 cup green pepper, chopped
1/4 cup celery, chopped
2 cups potatoes, chopped
1 pkg onion soup mix
1/2 cup water
Directions:
Preheat oven to 350 degrees.
Spray casserole dish with butter flavored cooking oil and place all ingredients in dish.
Cover and bake for 45 minutes.
This casserole is good served with a side salad.
Roast Beef Sandwich Mix
Ingredients:
1 cup leftover roast beef, shredded
1/4 cup celery, diced
1/3 cup onion, diced
1/4 cup shredded colby/monterey jack cheese mix
1/2 tsp prepared horseradish
1/4 cup cream cheese, softened
Directions:
Mix all ingredients and spread on bread of your choice.
This spread is especially good on wheat bread with a slice of tomato and a leaf of lettuce.
More beef is consumed on Memorial Day than any other day of the year. The Fourth of July and Labor Day typically tie for second place.
