Indian Lemon Rice Preparation

Lemon Rice or Nimmakkaya Saadam is a delicious South Indian dish one can easily make. You can also make it with leftover rice.Given below is the recipe for making this wonderful rice dish.

Ingredients

  • 2 cups Cooked Basmati rice
  • 100 gms Peanuts
  • Juice of 2 Lemons
  • 2 Red Chillies
  • 1/2 tsp grated Ginger
  • 1 tsp Jeera
  • 1 tsp mustard seeds
  • Curry leaves
  • 1/2 tsp Turmeric powder
  • Oil
  • Salt to taste

Method of Preperation

Heat Oil in a Kadai and splutter mustard seeds. After that add jeera, Red Chillies, Curry Leaves, grated Ginger and Peanuts and fry for 2-3 minutes.Add Turmeric power and remove from fire. Add Lemon Juice and salt and mix well. Add the rice to the Kadai and mix throughly without mashing the rice. Serve with Papads and Pickle.
