Lentil and Vegetable Curry

This vegetarian curry is delicious and simple to make. The combination of pumpkin, coconut milk and curry powder make a truly sumptuous meal. Adding brown rice and green vegetables or salad help to provide a well balanced meal.

Lentil and Vegetable Curry

INGREDIENTS

1 onion peeled and sliced

1 clove garlic, crushed

2 tsp minced ginger

1 red pepper diced and seeds removed

400 gm cooked and mashed pumpkin

700 gm waxy potatoes peeled and diced

400ml can coconut milk

400gm can lentils(drained) - or your own cooked lentils

1/4 cup fresh coriander, chopped

1tsp brown mustard seeds

Curry Flavour

1 tsp brown mustard seeds

1 tsp cumin powder

1 tsp cumin powder

pinch of cinnamon

a little hot chilli powder

Method

In a pan or pot, dry fry mustard seeds, turmeric and cumin powder for a short time taking care not to burn.

Add a little oil and stir fry garlic, pinch of cinnamon and chilli powder. Add more oil and add onion, red pepper and ginger. Cook till the onion has become translucent and the red pepper softened.

Add the mashed pumpkin, coconut milk and diced potatoes. Bring to the boil , then cover and simmer for 20 - 30 minutes until the potatoes are cooked.

Add lentils and coriander. Mix together and make sure lentils are heated through before serving. Season with salt and pepper if desired.

This is a lovely tasting vegetarian meal and looks nice too. I find it needs salt before serving. To make this dish quite a bit easier you can replace the from scratch curry flavour with 1 1/2 tbsp of Korma curry paste. I can't seem to find a vegetarian version of the ready made curry pastes so make it from scratch. Another option is to use curry powder. Replacing the mashed pumpkin with a can of pumpkin soup will also streamline the operation.

Serve with brown or white rice and some green vegetables or a salad.

My mother used to make lentils with other ingredients, which as a child I paid no attention to, so reading this brought all that back. She made them in a crock pot. It looks wonderful and I am thinking this might be close to her recipe. I am going to try it. Thanks, and good hub!

This does look yummy, but I have to tell you I have never heard of pumpkin soup. Maybe someone else here from the states knows where it can be bought, but I have never seen it or heard of it before. Just the same, this recipe is intriguing. I do love to try new things, and I like that this is vegetarian too.

Thanks Au fait. This is a really nice dish. You don't need to use a can of pumpkin soup. You can use mashed pumpkin which is what I usually do, because they always have lots of additives in soups. Pumpkin is the same as squash, or butternut. Pumpkin soup - homemade is yummy. Thanks for commenting.
