Lentil Soup and Stew

These lentil recipes are easily two of my favorite recipes. I have tweaked them over the past 25 years but never stopped making them. My lentil soup and stew recipes are mild in flavor.

When using brown lentils, be sure to wash them thoroughly and carefully. Because of their color, it is easy to miss tiny stones or dirt. It doesn't happen often, but there have been a few times when I have found them in my lentils.

Lentil Soup Recipe

Chop your vegetables the night before and store in a baggie for morning, then when you get home at night, your meal is ready, in your crock pot. This is easy to make, filling, and tastes great!

2 cups (1 pound) uncooked lentils, thoroughly washed

10 cups water

3 carrots, chopped

1 yam, chopped

2 stalks celery, chopped

1 large leaf mustard greens, chopped (or kale or spinach)

1 small onion, chopped

1 small clove garlic, minced

1 tablespoon dry parsley

1 bay leaf

1 teaspoon salt

½ teaspoon thyme

⅛ teaspoon pepper

½ cup brown rice, uncooked

The night before place washed lentils into crock pot with water. Soak overnight. In the morning add all remaining ingredients and cook on low for a dinner meal, or on high for two hours, then low, for a noon meal. Serves 8-10

Lentil Stew Recipe

1 ½ cup uncooked lentils, thoroughly washed

5 cup water

2 cup carrots, sliced

1 potato, chopped (optional)

1 stalk celery, chopped

½ cup celery leaves, chopped

1 small onion, chopped

1 bay leaf

½ teaspoon thyme

½ teaspoon garlic salt

⅛ teaspoon pepper

½ cup pearled barley or brown rice

The night before place washed lentils into crock pot with water. Soak overnight. In the morning add all remaining ingredients and cook on low for dinner, or high two hours, then low until noon. Serves 6

Some people say that Jacob of the Bible conned brother Esau out of his birthright with a dish of lentils. Must have been the simmering onions and garlic that got to him.

I have a recipe I like to make using the red lentils-- never tried it in the crockpot, but that sounds like a great idea.

I think I might make that for supper tomorrow! I have some lentils in the cabinet, and wasn't sure what to use it for. When I first bought the bag, I used some of it in a really tasty Italian soup-in-a-jar. I put it together for my Mom with instructions on how to cook it, and it came out fantastic! Until that point, I had never cooked with lentils. Once I tried it, I realized what I was missing. Anyway, great recipe!
