Chocolate Sour Cream Cupcakes!

Chocolate Sour Cream Cupcakes are so luscious and moist. The sour cream is the trick to making these cupcakes moist! They are topped with a Chocolate Butter Cream Frosting.

Ingredients

  • 1 cup sugar
  • ¾ cup plus 2 tablespoons flour
  • 3/4 teaspoon Baking powder
  • 1/4 cup plus 2 tablespoons cocoa powder, unsweetened, sifted
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg, large
  • 1/2 cup sour cream
  • 1/4 cup canola oil
  • 1 tablespoon vanilla extract
  • 1/2 cup water, boiling
  • paper muffin liner needed

Instructions

  1. Preheat your oven to 350 degrees Fahrenhiet
  2. Place paper muffin liners in pan.
  3. Mix in a large bowl; flour, sugar, cocoa powder, baking soda, baking powder and salt.
  4. Add egg, sour cream, oil and vanilla extract.
  5. With a wooden spoon mix all together until combined, do not over mix.
  6. Add boiling water; stir slowly until mixture is smooth.
  7. Fill muffin cups ½ full with mixture
  8. Bake for 15 to 18 minutes.
  9. Cool completely on baking rack.

Chocolate Butter Cream Frosting

Ingredients

  • 2 sticks butter, 1 cup, softened
  • 2 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons cream
  • ½ cup cocoa powder, unsweetened, sifted

Instructions

  1. In a medium size mixing bowl beat butter for 2 minutes on medium speed with electric mixer.
  2. Add powdered sugar and mix on low speed until blended.
  3. Next add vanilla extract, cream and cocoa powder; beat on medium speed for 3 more minutes until it is light and fluffy.
  4. Spread on cooled cupcakes.

Tres Cocoas Leches Cake

This recipe for Tres Cocoas Leches Cake is a moist, rich and dense chocolate cake that will send you to chocolate heaven.

Ingredients

Ingredients for Cake:

  • 1- Chocolate Devil's Food Cake mix
  • ingredients directed on cake mix:

Ingredients for Cream Topping:

  • 5 ounces unsweetened baker's chocolate
  • 14-ounce can evaporated milk
  • 14-ounce can sweetened condensed milk
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 350 degree.
  2. Using a Chocolate Devil's Food Cake mix, prepare as directed on the package.
  3. Ingredients for Cake and Cream Topping cake in a 9 x13-inch pan that has been spray with Pam.
  4. Bake 30-35 minutes at 350.
  5. Let cool for 5-10 minutes.
  6. Using the end of a wooden spoon or a sharp knife, poke holes in the top of cake at 1-inch intervals.
  7. While the cake is cooling, make the cream topping.

Chocolate Chip Cookies

We all love chocolate chip cookies! To bake fresh cookies on a short notice, keep a supply of cookie dough in the freezer. Wrap the dough well, I wrap in wax paper and place in a plastic freezer bags. When you need some fresh cookies for company or just for your cravings, thaw cookie dough enough so you can spoon it out to bake.

This scrumptious cookie dough and baked cookies will keep up to 9 months in the freezer. How neat is that, Chocolate Chip Cookies at our finger tips anytime we want them! Enjoy!

Ingredients

  • 2/3 cups shortening
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2/3 cups butter or margarine, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup chopped pecans, or any nut you desire
  • 1-12 ounce package semi-sweet chocolate chips ( I like milk chocolate)

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a large mixing bowl, mix well, shortening, butter, brown sugar, granulated sugar, eggs and vanilla extract.
  3. Blend in flour, baking soda, salt. (For a softer, rounder cookie, add ½ cup flour)
  4. Add nuts and chocolate chip, mixing well.
  5. Drop heaping teaspoonful of dough on an ungreased baking sheet 2 inches apart.
  6. Bake 8 to 10 minutes, until light brown.
  7. Cool a few minutes before removing from baking sheet.

Note: You can really put any flavor chips or chunk you desire in this cookie mix.

Texas Pecan Chocolate Sheet Cake Recipe

Chocolate Coated Bacon! Yes! I Dare You To Make It!

Chocolate coated bacon is crisply cooked and coated with milk, white or dark chocolate. I think I would love the black peppered bacon dipped in white chocolate with sea salt sprinkles! Give it a sprinkle of sea salt or nut, it is truly unique!

I dare you to give it a try, put it in a tin and give it to a friend!

Ingredients

  • 12 slices thick cut, about 1 pound
  • 12 wooden skewers, 12-inch
  • 6 ounces white candy coating, chopped
  • 1 cup milk chocolate chips
  • 1 tablespoon shortening

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Thread each strip of bacon onto a wooden skewer.
  3. Place the bacon on a baking rack in a large baking pan.
  4. Bake for 20-25 minutes, until crisp.
  5. Cool on paper towels completely.
  6. Melt white candy coating in the microwave in a microwave safe bowl; stir until melted.
  7. Combine milk chocolate chips and shortening in microwave safe bowl; melt in microwave, stir until melted.
  8. Coat bacon using a pastry brush on both sides with melted coatings.
  9. Top each strip of bacon with desired toppings.
  10. Place bacon strips on waxed paper.

Refrigerate until chocolate is hard. Store leftover in refrigerator.

Makes 12 slices of chocolate-covered bacon.

Tips:

  • Bacon may be cook without skewers if you prefer.
  • Bacon also can be dipped in chocolate completely or halfway.
  • You may use dark or white chocolate also for your coating if you desire.
  • You may use topping like, sea or kosher salt, toasted coconut, coarse ground black pepper, brown sugar, cayenne pepper, finely chopped pistachio or almond or whatever nut you like.
  • Make sure the bacon is crisp, chewy bacon and chocolate do not work.

Peanut Butter Brownie Bars

Brownies are always popular for snacks and desserts. This recipe is for Peanut Butter Brownie Bars, chocolate and peanut butter make a delicious combination. Bake up a batch for the family or take to a family gathering or potluck.

Ingredients

  • ½ cup crunchy peanut butter
  • 1/3 cup butter, softened
  • 2 eggs
  • ¾ cup brown sugar, firmly packed
  • 2 teaspoons vanilla extract
  • ¾ cup granulated sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 12 ounce package chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl; combine peanut butter, butter and brown and white sugar, beat until creamy.
  3. Gradually beat in eggs and vanilla extract.
  4. Combine in a small bowl, flour, baking powder, and salt; blend into peanut butter mixture.
  5. Spread into greased 13-inch x 9-inch x 2-inch baking pan.
  6. Sprinkle chocolate chips over brownie batter.
  7. Bake for 25 minutes or until lightly brown

Tips:

This recipe may be baked in a large size pizza pan to achieve a cookie effect. Do not spread dough completely to the edges. Stay about 1-inch from the edges since dough rises as it bakes.

Almond Joy Cake!

Ingredients

  • 1 box German chocolate cake mix with pudding
  • 1-1-ounce package marshmallows
  • ½ cup sugar
  • 1 ½ cup chocolate chips
  • 1 stick margarine
  • 1 cup evaporated milk
  • 1 cup sugar
  • 1 ½ cups chocolate chips
  • 1-12-ounce package coconut flakes
  • ½ cup evaporated milk
  • 2 cups sliced almonds

Instructions

  1. Follow the instructions on cake mix.
  2. Flour and grease two 9-inch x 13-inch baking pan.
  3. Divide the batter among the two pans.
  4. Bake at 350 degrees Fahrenheit for 20 minutes.
  5. In a sauce pan add 1 cup evaporated milk and 1 cup sugar; bring to boil.
  6. Remove mixture from heat; add marshmallows.
  7. Stir until the marshmallows dissolve; add coconut.
  8. Pour over both cakes dividing the mixture.
  9. In a separate sauce pan add ½ cup sugar, ½ cup evaporated milk and margarine.
  10. Heat this to a rapid boil; remove from heat.
  11. Add chocolate chips; drizzle over both cake and sprinkle with the almonds.

Chocolate Wacky Cake!

This yummy little Chocolate Wacky Cake is easy to make when you get a chocolate craving! I made this cake as a young teen it is easy and quick! You can frost with your favorite frosting or eat it without one. Enjoy!

Ingredients

  • 1 ½ cup flour
  • 1 cup sugar
  • 3 tablespoons unsweetened cocoa (sift to remove lumps)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 5 tablespoons oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon vinegar
  • 1 cup warm water
  • 1 cup chocolate chips

Instructions

  1. Combine first six ingredients and mix well.
  2. Make three holes in mixture; pour oil in one, vanilla extract in another and vinegar into the third.
  3. Add water and mix until blended.
  4. Pour into greased and floured 8-inch x 8-inch or round 9-inch cake pan.
  5. Sprinkle chocolate chips over batter.
  6. Bake at 350 degrees Fahrenheit for 35 to 40 minutes.

Chocolate No-Bake Cheesecake Pie

Two of my favorite ingredients chocolate and cream cheese. This delicious no-bake pie is easy to make, I known this will be a keeper for your recipe box! You better make two, because one will not last very long. Enjoy!

Ingredients

  • 1 ½ cups milk chocolate chips, melted and cooled
  • 1-8 ounce package cream cheese
  • 1/3 cup sugar
  • ¼ cup butter, softened
  • 1-8 ounce frozen whipped topping, thawed
  • 1 ½ teaspoon vanilla extract
  • 1- 9-inch graham cracker or chocolate crust

Instructions

  1. Cream until smooth the cream cheese, butter, sugar and vanilla extract.
  2. Add chocolate that has been cooled; beat well.
  3. Fold in frozen topping.
  4. Pour into pie shell.
  5. Refrigerate until ready to serve and any leftover.
