One Dish Meal Recipe: Low Fat Chicken and Pasta Recipe

Looking for an inexpensive and easy one dish meal that is both healthy and delicious? This delicious low fat stove top chicken and pasta recipe is sure to be a hit with everyone who tries it, whether you're preparing for a family dinner or an evening of entertaining. No one even has to know that it is a low fat recipe unless you decide to share the information!

Delicious Low Fat Chicken and Pasta Recipe

Ingredients

  • 8 ounces of pasta (your favorite shape and variety, semolina or whole wheat)
  • 2 pounds boneless, skinless chicken breasts
  • 1/4 cup extra virgin olive oil
  • 1 clove minced garlic
  • 1 medium green or red pepper, diced
  • 1 can reduced fat cream of chicken or cream of mushroom soup
  • 1 cup frozen green peas
  • 3/4 cup reduced fat or skim milk
  • Salt and pepper to taste
  • 1/2 cup grated parmesan cheese

Directions:

Prepare the pasta according to the directions on the package. Cook until the pasta is al dente and drain.

While the pasta is cooking, heat the extra virgin olive oil in a large nonstick skillet over medium high heat. Cut the boneless, skinless chicken breasts into strips or fairly large chunks and place in skillet along with minced garlic and diced red or green pepper. Cook for approximately six minutes, until the chicken is thoroughly cooked.

Add the remaining ingredients to the chicken and vegetable mixture and bring to a boil. Reduce the heat to low and simmer until heated through.

Add the pasta, tossing gently to coat, and serve immediately.

Serving Suggestion

This one dish recipe is a complete meal by itself. You can always add a leafy green salad or side dish of steamed carrots or other healthy vegetable to round out the entrée. This dish also goes perfectly with crusty French bread and a glass of dry white wine.

Chances are that you family will enjoy this recipe so much that you won't have any leftovers. If you do, you can easily alter the flavor for a second meal by converting the dish into a delicious oven baked casserole that's also sure to be a hit in your household.

Simply spoon leftovers into an oven safe casserole that has been sprayed with nonstick cooking spray, sprinkle a little more grated parmesan cheese on the top, and bake at 350 degrees Fahrenheit until hot and bubbly, approximately 30 minutes. For even more flavor variety, mix in your favorite frozen veggies prior to baking. Broccoli, cauliflower, squash, artichoke hearts, and asparagus make excellent add-ins for this dish.
