How to make tacos with out using the stupid seasoning packs
I hate it when people use taco seasoning for their tacos. The seasoning for tacos is really incredibly easy to make, so much so that taco seasoning is a waste of money, and taco seasoning usually has msg and a bunch of other stuff in it that I don't like to put in my body.
For the seasoning you will need one yellow onionm three cloves of garlic, the juice of two limes, one bunch of cilantro, and about two tablespoons of cumin. (When I made this at the restaurant I also added paprika to give the tacos meat that reddish color that Americans seem to like)
Basically all you need to do is puree all the above listed ingredients in the food processor until you have a well blended liquid. (A blender will work also if you add a little bit of water) For more American style tacos add this marinade to two pounds of browned and drained ground beef . Cook until the liquid evaporates and add salt to taste. (I would estimate about a tablespoon.)Or use it to marinate strips of skirt steak or chicken breast then grill them.
I like my tacos two different ways. Gringo style with ground beef in a soft flour tortilla with shredded cheddar, lettuce, tomatoes, diced onions, salsa, sour cream and hot sauce, and a more authentic variety with skirt steak in soft corn tortilla with pico de gallo, or salsa, and guacamole. I also like variations in between. Have fun with it.
