Marry Me Cheesecake: So Good He'll Propose

My mom used to joke that this cheesecake was so good that any man she made it for couldn't help but propose marriage. It wasn't until I made it for a new friend in college that I realized how right she was - he awkwardly joked, "I'd totally marry you for this." And two years later, he did!

Ingredients:

Filling:

8 ounces - Cream Cheese (room temp - this is KEY)
½ cup - Sugar
1 Tablespoon - Lemon Juice
1 teaspoon - Vanilla
dash of Salt


Topping:

1 cup - Sour Cream
3 Tablespoons - Sugar
1 teaspoon - Vanilla

+ 1 pre-made graham cracker pie crust* (or make your own)

*I like to use the pre-made graham cracker crusts because they taste just as good to me and they are so much less work. If you like to make your own crust, do!

Alternatives: If you want, you can make this in a 9 x 9 pan and make your own graham cracker crust. If you want to make a 9 x13 pan, make a larger crust and simply double the filling and topping.

Instructions

  1. In a medium mixing bowl, cream the above Filling Ingredients
  2. Add 2 eggs – one at a time, beating well after each.
  3. Pour into graham cracker pie crust.
  4. Bake at 325 degrees for 25-30 minutes.
  5. While cheesecake is cooking, mix together Topping Ingredients.
  6. Cool for 5 minutes and then pour topping.
  7. Cool completely and then refrigerate.
  8. Serve and prepare to say "Yes! Yes! A thousand times yes!"
