Menudo Recipe Made Simple
Hey what's going on everyone? You're here because you want to know how to make some KILLER menudo so that's what I'm going to show you how to do. Easter is coming up and menudo is usually the dish of choice come Easter morning. So here's how you'll need to make your menudo
- Honeycomb tripe
- Bay leafs
- California Chile
- Pasilla Chile
First you'll need to buy some top quality Honeycomb tripe. Wash it very thoroughly and then pat it dry with a paper towel. Next you'll need to cut the honeycomb tripe into 1 inch squares.
Put your cut honeycomb tripe into a pot of water and add enough water to cover honeycomb.
Add whole onion cut in half, two bay leaves, and one head of garlic. Salt to taste.
Cover pot, then simmer at lowest temperature between 1 and a half to 2 hours.
Seed your California and Pasilla chili's. Wash off, then put them in a sauce pan and simmer for 20 minutes or until tender (in separate pot)
Take the chili, then put them in a blender with the onion from the honeycomb pot, garlic, and blend until it's pureed. Then sift blended mix into honeycomb pot. If desired you may also add hominy.
One tea spoon of oregano, crumble into pot.
Let simmer for 5-10 minutes and enjoy!
