Easy Mexican Burrito Pie Recipe

This recipe for Mexican Burritos Made Into Pie was developed because our family loves Mexican food. But, we usually don't have time to pull out and prepare all the yummy ingredients to make a truly delicious Mexican burrito. So, once we have all the ingredients out, we make many pies to freeze. Now, when it's time for a festive dinner, we just pull the burrito pie out of the freezer, pop it in the oven, top it with sour cream and serve. Clean-up is a snap too!

It is very easy to customize this recipe. Just add or leave off any ingredients. I love the taste of fresh cilantro and green onion, but my kids can do without the green stuff. My hubby loves meat, but I prefer to make a vegetarian burrito recipe. We all like extra cheese. Once we have had one of our assembly sessions, we have several versions of this entree in our freezer to choose from.

The key to this recipe is the salsa. The type of salsa used changes the entire flavor of the dish. If hot and spicy is not on your menu, then use a mild salsa. Or, experiment with a flavored salsa, like one of Newman's Own (Peach is delicious!) If you make a salsa from scratch, it is sure to shine in this dish.

Ingredients for Mexican Burritos Made Into Pie

Before you begin assembly of Mexican Burritos Made Into Pie, gather and prepare the ingredients listed. The following ingredients will make 1 pie with 4 servings. Double or triple the ingredients to make additional pies to freeze.

3 Soft Tortillas (approx. 8" round)

1 cup salsa

1 cup ground beef, cooked (leave this ingredient out to make a vegetarian burrito recipe)

1 cup black beans (one 15 ounce can)

1 cup diced tomatoes, drained (one 14.5 ounce can)

1 1/2 cups Monterey Jack cheese, shredded

1/4 cup cilantro, chopped

1/4 cup green onion, sliced

1 Tablespoon black olives, sliced (optional topping)

Sour cream (optional topping)

Assembly Instructions

Mexican Burritos Made Into Pie are easy to assemble. If you are making more than one burrito pie, set up an assembly line!

1. Layer the following ingredients in a 9" round aluminum tin or baking pan:

  • 1 tortilla
  • 1/3 cup salsa (use spoon to spread into a thin layer)
  • 1/2 cup ground beef (leave this out for a vegetarian burrito recipe)
  • 1/2 cup black beans
  • 1/2 cup tomatoes
  • 1/2 cup Monterey Jack cheese
  • 2 Tablespoons cilantro
  • 1 Tablespoon green onion

2. Lightly press the first layer down and repeat the layer from step #1 again.

3. Lightly press the second layer down and layer the following ingredients on top of the previous two layers:

  • 1 tortilla
  • 1/3 cup salsa
  • 1/2 cup Monterey Jack cheese
  • 1 Tablespoon olives.

4. To cook this entree now, follow the cooking directions below.

5. Wrap Mexican Burritos Made Into Pie that you plan to freeze in aluminum foil and then plastic wrap.

Instructions: Thaw dish in refrigerator for approx. 36 hours. Preheat oven to 350 degrees. Bake covered with aluminum foil until heated through, approx. 30 minutes. Remove cover and bake 10 more minutes or until cheese is melted. Let stand 10 minutes before serving. Internal temperature should reach160F.

Serving Suggestions: Top with sour cream and serve with tortilla chips and salad.

Tips to Customize Mexican Burritos Made Into Pie

Make this dish a favorite of your family by adjusting the ingredients. Here are a few suggestions I heard in our store over the years:

  • Leave out the beef and make it a vegetarian burrito recipe.
  • Use chicken instead of beef
  • Use chili beans instead of black beans.
  • Make it a healthy Mexican dish by using low-fat cheese, whole wheat tortillas and lean ground beef. Leave off the sour cream and it will be South Beach Phase 2 friendly.
  • Try different types of salsa for a unique taste.
  • Make lots of pies at one time and freeze them. Consume the entree within 3 months of freezing for the best taste.
  • Once you have cooked the burrito recipe, freeze individual portions to microwave later.
  • If you are assembling in a baking pan that you don't want to freeze, generously line the pan with aluminum foil. Once the assembly is complete, remove the aluminum foil and freeze.
