1. Steamed Paneer

Ingredients and method as follows

Ingredients

  • 1 cup Paneer, grated
  • 1 Carrot, grated
  • 1 Onion, chopped
  • 1/4 cup Coriander leaves, chopped
  • 2 tsp Green chillies paste
  • Pinch of asafoedita powder
  • 1/4 cup Gram flour
  • 2 tsp Coconut, Grated
  • 1 tsp Mustard seeds
  • 2 tsp Oil
  • Salt, as per taste

Method

Mix grated paneer, grated carrot, onions, green chillies paste, coriander leaves, salt, asafoedita powder, gram flour into dough like mixture by adding few drops of water. Keep it aside for 15-20 minutes.

Grease a steaming plate with little oil, place the dough in the plate and steam well. Once cooked cut the dough into pieces of required shape and size.

For seasoning heat a little oil in a pan and add some mustard seeds, once the mustard seeds start to sputter pour this mixture on top of the cooked paneer pieces. Garnish the dish with grated coconut.

2. Milk Sweet

Ingredients and method as follows

Ingredients

  • 1 cup Raw Rice
  • 1 cup Black Gram
  • 1 liter Milk
  • 1 cup Sugar
  • 1 tsp Cardamom powder
  • Oil, as per requirements
  • Salt, as per taste

Method

Soak raw rice and black gram for 2 hours and grind it finely into a paste(thick consistency), add salt to it and mix well.

Heat a pan add oil (for deep frying), make small balls of the dough and put it in the oil. Deep fry the balls in medium flame. Once cooked put these balls in cold water for 5-10 seconds.

In another pan boil the milk. Add sugar and cardamom powder to it and mix well. Finally put the balls into the prepared milk.

TIPS:

  • Don't allow the flour to ferment.
  • Put the balls into milk 10 minutes before serving.

3. Noodles chat

Ingredients and method as follows

Ingredients

  • 1 cup Noodles
  • 2 Potatoes
  • 1 tsp Chat masala powder
  • 1 tsp Green chutney
  • 1 tsp sweet chutney
  • 1/4 cup sev/oma podi
  • 1/4 cup Grated carrot
  • Coriander leaves
  • Oil, as per requirements
  • Salt, as per taste

Method

Deep fry the noodles in oil. Boil the potatoes in water, peel the skin and cut them into small pieces.

Take a plate spread the potato pieces on it. On top of it spread the fried noodles. Now add the chat masala powder, sweet chutney, green chutney, sev/oma podi, grated carrot, salt and mix well. Finally garnish it with coriander leaves and serve.

TIPS:

Mix all the ingredients together ten minutes before serving else the noodles and sev/oma podi will become soggy taking away the crispness.
