These cupcakes are delicious and make a great gift if decorated correctly. For frosting recipes, scroll to the bottom of this page. These mint chocolate cupcakes go well with a chocolate ganache or simple vanilla buttercream.

This recipe makes twelve cupcakes and takes about a total of 30 minutes to bake. These are great cupcakes for parties, kids and a family dessert. If you have any comments, please leave them at the end of the page. Enjoy!

Ingredients

3 oz. of dark chocolate

2 oz of chocolate chips

1 1/2 cups of flour

3/4 cup of light brown sugar

1/4 cup of butter

1/2 tsp. of peppermint extract

3 tbsp. of cocoa powder

1 1/2 tsp. of baking powder

1 tsp. of baking soda

1 cup of milk

A pinch of salt


Step-by-Step Instructions

  1. Preheat the oven to 325 degrees Fahrenheit.
  2. Melt the chocolate, milk, peppermint and butter on the stove until it is all melted and smooth.
  3. Mix the flour, sugar, baking soda, cocoa, baking powder and salt in a separate bowl.
  4. Add the melted chocolate mixture to the dry ingredients until blended.
  5. Add chocolate chips if you want a richer taste.
  6. Fill the cupcake holders 3/4 full with the batter.
  7. Bake for 25 minutes or until firm.
  8. Let them cool before attempting to frost them.

Brittany, What a scrumptious, tasty, welcome to the festive celebrations of ending 2011 and beginning 2012! In particular, I like the cupcakes and frosting topped by peppermint. It gives such a bright absolute top to the dessert and such an distinct taste.

Hello! These sound scrumptious. I would love to make them. I notice your ingredient list calls for 1c milk, however I didn't see it used in the instructions anywhere. Did I overlook it somewhere? Your other recipes look tempting as well : )
