How to cook a mixed fish Dish, a Delicious Seafood Recipe
I grew up in a green-grocer’s shop, which was also a fishmonger and sold game too; so we always had an interesting table even in the more austere times of the 50’s. We always had plenty of fish and fish-bits to eat up too, so Mum had lots of ideas for cooking fish. This was a favourite summer fish meal; Poached mixed fish. Also I have done this hub in association with my hub about the waste of fish due to the quota policy.
RECIPE FOR COOKING WHITE FISH
What you need
8 scallops [I like them best with the roe still attached but you can just get the meats]
8 King prawns or tiger prawns
6 fish sticks.
3 cloves of garlic
1 tbs olive oil.
A sprinkle of salt and a little white pepper.
1 tsp of dried Dill, Thyme, Parsley, paprika
½ cup white cooking wine or any decent white wine.
2tbls lemon juice
1tbs white wine vinegar
Here’s what you do;
HOW TO MAKE A CHEESE WHITE SAUCE
1 pint milk, 2 tablespoon of corn flour [or try arrowroot powder] ¼ pound of grated cheese [whatever you prefer] 1 tbles butter.
A heavy deep frying pan with a lid.

HOW TO MAKE YOUR FISH DISH
Chop up the shallots and garlic; heat the pan put in the oil, add the shallots and lightly fry until soft add your white wine and then your white fish, cook for 3 minutes now add the mussels, scallops, prawns and garlic. Reduce on a gentle heat. Season with salt and white pepper, shred the fish sticks with your fingers and put over the mix, now add the lemon juice and vinegar sprinkle the herbs over the top. Put the lid on the pan for a couple of minutes so that everything is poached.

What to drink with fish
Lemon juice drinks are ideal to accompany a fish meal. There are a number of wines that have quite a citrus taste to them, experiment until you find your favourite.
I always think that black tea goes well with any fish meal espescially the oilier fish.
