There are seven wonderful things you can do with pimento cheese and I bet you can come up with a lot more. If you think it would taste good give it a try.

Pimento Cheese, The Caviar Of The South

In the south we affectionately call this cheese spread pi-men-ah cheese, and ever since the 1930s when pimento peppers were first canned and placed at our finger tips people have been making pimento cheese and it has become a part of our food culture.

We pile pimento cheese onto celery sticks, melt it on big fat slices of homegrown ripe tomato under our ovens broiler, and slather it onto soda crackers. One of my favorite ways to eat pimento cheese is on pan grilled sandwiches on slices of homemade sourdough bread. Now that is gourmet eating. I make my sourdough bread in a loaf pan and then I slice it a little thick and butter one side of each slice of the homemade sourdough bread. I then put a heaping tablespoon of the pimento cheese and a teaspoon of Duke's Mayonnaise between the two slices of buttered sourdough bread with the buttered sides of the bread on the outside. I then grill the sandwich in a skillet sprayed with vegetable coating spray until the bread is golden brown on each side. Now that is some more sandwich.

Spread the pimento cheese mixture out into a 8" X 10" baking dish. Top with the crushed Ritz Crackers. You'll want to bake the dish in a 350 degree oven until the crackers are brown and the cheese is bubbly.

Kick It Up A Notch By Adding A Cup Of Fresh Crab Meat For A Delicious Crab Dip

You can purchase lump crab meat from Blue Crabs in your local supermarket deli in a can. Be sure to pick through the crab meat and make sure there are no shell fragments. Add the cup of crab meat to the other ingredients when you add all the other ingredients. Then just proceed with the recipe. Oh man that is some more delicious Crab Dip. I have from time to time used a cup of imitation crab meat that I have shredded with two forks. It also tastes delicious.

If you do make it with the crab meat sprinkle the top of the dip with paprika before you cook it.

Serving Suggestions

Serve on Ritz Crackers, on Mini Sandwiches, on Celery Sticks, Pita Wedges, or anything you like. I guarantee you that what ever you serve it on will be delicious. If you have small seashell style dishes you can bake the crab dip in them and serve it with Ritz Crackers. It is so very delicious this way.

It was in Charleston S.C. where I first ate the dip with the lump crab meat added to it. I really thought it was so very delicious that way. I think I could have eat a gallon of it made that way.

Pimento Cheese can be made into sandwiches real quick and easy and children love pimento cheese sandwiches. Or you can kick it up a notch or two and make it into delightful appetizers by putting pimento cheese spread on celery or cut the crust off bread and make it into little finger sandwiches. I like to make it into little finger sandwiches by putting the spread on sourdough bread and toasting them in butter in a pan. I then cut each little sandwich in four pieces and I end up with delightfully delicious sandwiches that people will love.
