Easy Lasagna Mama
The best way to make this is to buy some tinfoil pans that throw away afterwards for a mess free meal. This makes alot of lasagna! Many times I fill all the pans then wrap in tinfoil and freeze for a week for a meal later on.
3 lbs hamburger
1/2 onion (diced!)
2 tbls garlic
Cook these together, make sure that the hamburger breaks up into small pieces. Drain the grease and add the following:
1 pkg spaghetti seasoning
1 tbls Italian seasoning
3 cans diced tomatoes with juice
1 12 oz can tomato sauce
1 8 oz can tomato paste
*Optional - 1/3rd C red wine
Bring to a boil and set on a low heat, stir occasionally while preparing rest of ingredients Let cook for at least an hour. After that hour, turn off the heat and let cool.
Bring a large pot of water to a boil then add the contents of 3 boxes of lasagna noodles, follow directions of package then set aside. Works best if you drain and let cool before using. There is also a type of noodles that are ready to use (without boiling first). See the link below for more information on these, I love them!
In a bowl combine the following and set aside:
32 oz mozzarella cheese
16 oz fresh grated parmesion cheese
16 oz Romano Cheese
In a large bowl fold together the following (to fold means to gently mix together instead of using a beater or a vigorous mixing):
12 oz small curd cottage cheese
8 oz parmesion cheese
16 oz ricotta cheese
16 oz mozzarella cheese
*Season with Garlic Salt, Season Salt, and Italian Seasonings
The next step is to grease the pans and do a layer of noodles on the bottom of the pan, the idea here is that there is plenty of sauce and plenty of cheese and plenty of pans. Don't worry about how pretty it looks, it will taste fantastic! After this first layer, do a layer of sauce with a dusting of dry cheese then a layer of noodles, a layer of the cheese (wet!), it is a little hard to spread the wet cheese but try to get at least 1/4 an inch in most areas. then a small sprinkling of the dry cheese then another layer of noodles. Keep up until you reach the top of the pan. When you reach the top, you want the top layer to be meat sauce then more dry cheese on top. Again, it doesn't matter how it looks, it tastes fantastic and looks great when it comes out.
Cook at 350 Degrees for 30 to 45 minutes depending on how many layers you did and the thickness of the pan.
