Delicious Butter Cookies Recipe

By Dexter Yarbrough. In today's world of no fat, low cholesterol diets, calorie busting cookies sure don't win any brownie points! But getting your toned butt and abs off the treadmill for a treat once in awhile can't hurt! I would suggest you try the world famous butter cookies that I used to eat while attending public high school in Chicago. Hmmm. People sure did seem to be slimmer back then.

Anyway, we used to forego the nasty vegetable and healthy junk they gave us and went straight for the good stuff. If you like old school stuff, you know, music, cars, Pac Man, Tom Cruise in the movie Risky Business, the Chicago butter cookie will awaken your sense for nostalgia.

Now, assuming that you did not attend a Chicago public school is no reason for you to miss out on the smell and taste of this delectable, fattening treat. You only live once, right?

The Recipe

OK. Here is what you need:

  • 2 sticks (1 cup) softened butter
  • 1 egg
  • 2/3 cup of granulated sugar
  • 2 cups plus 2 tablespoons of all-purpose flour
  • 2 teaspoons of vanilla extract

Heat oven to 350 degrees Fahrenheit

Cream butter and sugar until fluffy. Add egg. Add vanilla extract. Mix in flour - small increments. Roll dough into balls. Flatten the dough slightly on ungreased cookie sheets. Bake for about 12 to 15 minutes until golden brown.

Delectable

Alright, so this recipe should make about 12 to 18 cookies, depending upon how large you round out your dough. When they come out of the oven, you will have a delicious treat that will challenge any diet!

Oh, C'mon! Give 'em a try! - Dexter Yarbrough

is there any substitute for vanilla extract or is that the best way to go?

Hi Mkiaconis! Vanilla extract is the best way to go, however, you can try lemon or almond extract, if you desire. I think you would find that vanilla extract will give you the best flavor. Thanks!

ok, so i made these last night, I think i messed up the recipe because the dough was runny BUT they were absolutely delicious nonetheless :]

I am so sorry they didn't turn out right for you. Your dough needs to be thick (not runny) so you can roll them into balls. I hope you try it again. They really are great!

i will try it again, the dough set, i think it was because the butter was melted... or maybe i needed to refrigerate the dough.. either way... they are delicious :]

Hi! I am glad you will try again. The butter shouldn't be melted. It should be at room temperature. You don't need to refrigerate the dough. I am glad they taste good. I just want you to experience them when they are perfect!!!

Hi Dexter, I have to raise my hand and say I never saw Risky Business although I've seen the trailer. Pac Man was and is the game still! I do love sugar cookies and it's one batch I can keep to myself as my son doesn't like them. Can't wait to try the recipe! Put this on my FB for friends to try their hand! Have a great day!

Dexter,

I loved your *attitude* in this Hub! Having attended high school in Newark, New Jersey, I can picture what the scene was like at your Chicago high school.

With all that butter in your cookies, I'm sure they must taste sinfully good.

Dexter...I am a bit greedier than Sunshine.....I'd like 3 dozen, if you don't mind.

I'm thinking, maybe you should make "nice-nice" with the Fed-Ex guy......he may give you a break on all this shipping you're about to do.

btw.....don't mean to be annoying...but it would be really nice if you sent mine just in time for Easter?? Thanks, Dex! You're a pal!!
