Money Saving Tip

If a recipe calls for chicken breast you can save money by using the more flavorful chicken thighs instead of chicken breast. Just remove the skin and bones from the chicken thighs and you'll have chicken that is a lot more flavorful than the breast and it's usually about a third the cost of chicken breast.

Purchasing Poultry

Be sure that any poultry you purchase is well with in the purchase by date on the package. Your packages should be well sealed and free of holes or tears. Poultry that is supposed to be frozen should be frozen solid.

Chicken Food Safety

You should never leave a package of chicken out to thaw on the counter because bacteria thrives at room temperature. The most accurate way to determine the doneness of chicken is to use a meat thermometer. Dark meat should register 180 degrees and breast meat 170 degrees. This is most easily done with an instant-read thermometer.

Never place cooked chicken on the same platter that held the uncooked meat. This often happens when people grill and it ends up making people sick. You should never refrigerate a raw or cooked whole chicken with stuffing inside the body. Always store the chicken and the stuffing separately.

You should always clean up cutting boards, knifes, and counters where you have cut up raw chicken with a sanitary solution made of one part bleach to six parts water. Store this mixture in a spray bottle so you can spray and clean up easily.

When you cut up and work with chicken always use a plastic cutting board because it's easier to clean up than a wooden one. And with wooden cutting boards you have the problems of cracks and bacteria grows in cracks. Wash your plastic cutting boards in hot soapy water or run them through the dishwasher.

Fresh Chicken Is Highly Perishable

You should know that fresh chicken is highly perishable. As soon as you arrive home from the market, wrap chicken in plastic wrap and then you can store it in the coldest part of your refrigerator for up to two days.

For longer storage, you can freeze properly packaged chicken parts for up to nine months and whole frozen chickens for up to a year.

Time Saving Tip For Quick Meals

Grill chicken thighs that you've removed the skin and bones from and while the chicken thighs are grilling sprinkle them with your favorite taco seasoning. When the chicken is cooked take a couple of forks and shred the chicken so you can freeze it and then on a busy day you can make chicken tacos or a chicken taco salad real fast.

You can also grill the chicken with out the taco seasoning and then when they are done shred the chicken and freeze it. On a busy day you can add barbecue sauce and have really great chicken barbecue sandwiches ready in just a few minutes. So no your family doesn't have to live on hot dogs.

Once you taste this chicken you'll find that the pecan coating adds a pleasant crunch to plain chicken. Be sure to make the Honey Dijon Sauce so people can dip their chicken in it.

Ingredients For Your Pecan Chicken

1. One Half Cup Fine Chopped Pecans.

2. One Half Cup Panko Bread Crumbs.

3. One Teaspoon Dried Thyme.

4. One Teaspoon Paprika.

5. One Teaspoon Ground Sea Salt.

6. Six Skinned Boned Chicken Thighs.

7. One Fourth Cup Dijon Mustard.

In a bowl, combine the pecans, bread crumbs, thyme, paprika, and salt. Coat your chicken with the mustard, then roll the pieces of chicken in the pecan mixture. Bake uncovered at 350 degrees for 25-30 minutes. You will want to turn the chicken over half way through the cooking time to be sure the chicken gets cooked thoroughly.

Honey Dijon Mustard Sauce

You can make a delicious Honey Dijon mustard sauce by mixing a half cup of honey with a fourth cup of Dijon mustard. I do mine in the blender so it gets mixed together very well. Sometimes I add a half teaspoon of ground cayenne pepper to the mix.

If you get a craving for Chinese Food you don't have to go any further than your kitchen. You can have this delicious chicken recipe ready in just a few minutes and the flavor is really good.

Chow Mein Chicken Ingredients

1. Three Cups Cubed Cooked Chicken.

2. One Large Red Bell Pepper Seeded And Cut Into Thin Strips.

3. Two Celery Ribs Chopped Into Small Pieces.

4. One Large Sweet Onion Diced Fine.

5. One Half Cup Chicken Broth.

6. One Tablespoon Soy Sauce.

7. One Half Cup Fresh Sliced Mushrooms.

8. One Small Can Chow Mein Noodles.

9. One Can Condensed Cream Of Mushroom Soup.

10. One Fourth Cup Margarine Or Butter.

11. One Third Cup Cashew Nuts.

In a large skillet saute the onion, red bell pepper, and celery in the butter until it is done but not browned. Add in all the rest of the ingredients and stir everything up well. Save the chow mein noodles and cashew nuts for last. Put them on top of the other items.

1. Four Ounces Shredded Chicken Thigh Meat.

2. Two Cups Shredded Cheddar Cheese Divided.

3. One 10 Ounce Can Cream Of Mushroom

4. One Third Cup Fine Chopped Sweet Onion.

5. One Teaspoon Ground Sea Salt.

6. One Teaspoon Black Pepper.

7. Three 8 ounce cans tomato sauce.

8. One Tablespoon Chili Powder.

9. One Teaspoon Ground Cumin Powder.

10. 10 Flour Tortillas.

11. One Cup Shredded Monterey Jack Cheese.

12. Guacamole For Garnish.

13. Sour Cream For Garnish.

14. Fresh Sliced Jalapenos For Garnish.

In a bowl combine chicken, one cup of the cheddar cheese, mushroom soup, onion, salt, and pepper and set aside.

In a sauce pan combine tomato tomato sauce, chili powder, and cumin. Simmer uncovered for 5-10 minutes.

Meantime spoon 1/3 to 1/2 cup of the chicken mixture down the center of each tortilla. Roll up. Place the seam side down in a greased 13" X 9" baking dish. Top with the tomato sauce mixture and sprinkle with the Monterey Jack Cheese and remaining cheese. Bake uncovered at 350 degrees for 20 - 25 minutes.

Spoon out the chicken enchiladas and serve each garnished with the guacamole, sour cream, and a few fresh sliced jalapenos.

I have a home deep fryer I cook my chicken in and that is the easiest way to do it. The best way to cook your chicken is to use a instant read thermometer and cook your dark meat chicken pieces to 180 degrees and your white meat chicken pieces to 170 degrees. This is an internal temperature I am talking about.

Fry your chicken strips in hot ( 350 degree ) oil until the chicken is fried golden brown. Drain well and serve at once. You can make really good barbecued chicken by putting your chicken strips into a large bowl and then put a cup of barbecue sauce in the bowl and stir the chicken strips around. Either way you'll have some of the most delicious chicken strips you'll ever eat.
