Outdoor Barbeque (BBQ) Recipe For Delicious Healthy Meal

It Doesn't Get Any Better

What could be better than to have good friends over to sit in the sun on the deck and have a barbeque? Not much. I was in 7th heaven and loved every second of it. We had the most delicious meal that you could imagine and it had very little fat and the teriyaki seasoning was out of this world. Combine that with Strawberry Daiquiris a fresh green salad and good friends, it was a spectacular afternoon.

Just when you think you are smarter than a 5th grader, up comes this question: what is the correct spelling of BBQ. Well I had quite a time deciding which one to use. It appears that in Australia and New Zealand they typically use a short form: Barbie.

I studied them all in various ways and uses and found that BBQ, Bar-B-Que, Bar-B-Q, Barbeque and Barbecue are all used in equal strengths. I like BBQ, so I shall use it, but I want everyone to know that I know about the other ways of saying BBQ. Oh, yeah, the spell checker has not learned all the spellings, so don't believe that.

Appetizers: Strawberry Daiquiri Fresh Fruit Spinach Dip and Spicy Chips

Strawberry Daiquiri Frozen Blended

Ingredients:

  1. Rum (I like light Bacardi) 1 Ounce
  2. Frozen Strawberries 2 or 3
  3. Sugar or Sweetener 2 or 3 tsp (sweeten to taste)
  4. Lemon Juice or Lime Juice 1/2 Ounce
  5. Ice Cubes 1/2 cup (variations in strawberries call for more or less)

For each serving, combine the ingredients in a blender and blend on high until the ice and berries are crushed or smooth to your liking. I like my drink a little stronger so I add another ounce of rum. I like the strawberry taste so I add strawberries to mine and use less ice. I don't want added sugar so I leave that out, but this could be tart. I add a packet of artificial sweetener if I need more sweet. This makes a grand sipping drink for me.

Serve with fresh fruit, we served apple slices and grapes. That was refreshing and fun. Also served were Spicy Jalapeno Corn Chips and spinach dip. We found a spinach dip that comes prepared in a jar and only has 50 calories for 2 tablespoons and was heavenly delicious.

Barbie Fixins

Chicken and Veggie Skewers

The main course was a BBQ skewer with chicken and vegetables that was glazed with teriyaki and slow cooked on a Brinkman Smoker Grill. The same thing can be achieved with a gas grill with the heat turned down low.

Chicken and Veggie Skewers

Ingredients:

  1. Chicken Breast 1 large chicken breast for Two People (We had 5 people and used 3 Breasts) Cut into Bite Size portions.
  2. Sweet Red Pepper 1 Cut into 1/2 to 1 inch squares
  3. Sweet Yellow or Orange Pepper 1 Cut into 1/2 to 1 inch squares
  4. Sweet Onion 1 or 2, 1 Cut into 1/2 to 1 inch squares
  5. Fresh Mushrooms Whole or cut into quarters for large ones
  6. Teriyaki Glaze or Marinade Brush on for the last 10 minutes of cooking.

Skewer the ingredients alternating them to fill at least two skewers for each person. Place on the grill and cook on low heat for around 20 minutes on each side. Brush on teriyaki glaze for the last 10 minutes.

The heat in each grill varies a lot. My grill is designed to cook slow. I love it, but it does require planning because it takes a lot longer. Gas grills typically cook much faster. On my son's gas grill, we put the food on one end and have the gas heat the other end to achieve very slow cooking when we want it.

Garden Fresh Salad

I like fresh green salad and have it as often as possible. I like to keep it simple and fresh as possible. Pick it out of the garden if possible and vary the ingredients.

My Salad

Lettuce 1 head of iceberg or leaf lettuce or lettuce of your choice

Radish 3 or 4 sliced thin and add to the lettuce

Tomato cut into bite sized pieces

Dressing I like to serve one or two fat free choices and one regular, we had balsamic vinegar fat free roka, and a ranch.

The salad can be served in a bowl or salad plate but with the skewers, I chose to serve the salad on the same plate with the skewers and another round of drinks.

Dessert

For the guests wanting a decadent end to a meal, out of my 5 guests, 1 abstained, 2 had a normal helping, and two had double servings. The meal really left room for a loaded dessert.

Double Chocolate Brownies

Select your favorite brownie mix and prepare it according to directions.

Add Chocolate Chips before baking 8 ounces of semi-sweet or more.

Bake according to directions.

Select Double Fudge Frosting (it comes in a can)

Select premium Vanilla Ice Cream


When the brownies are cooled slather the top of the brownies with the Double Fudge Frosting.

Serve a generous portion with a scoop of ice cream. This is so simple to make and serve, and everyone raves about it and it all came out of a box and can.
