How to Make a Delicious, Homemade Chicken and Rice Casserole

This is an all-fresh ingredients, homemade chicken and rice casserole recipe, no cans with processed cream soup, no joke,a healthy meal made from scratch. This chicken and rice casserole recipe has been passed down in my family for years. This ain't your 5 o'clock put something together for dinner meal Yes, it does take more time like every real homemade meal. The result -a delicious casserole your whole family will enjoy.

Things you need:

1 whole chicken (preferably organic)

1 1/2 cups of rice (I use organic basmati rice from Whole Foods Store)

1 large yellow onion finely cut

3-4 TBS Vegetable Oil

1/2 Bunch of fresh parsley, finely chopped

1-2 teaspoons of savory

Preparation:

Wash chicken, put in a pot, add one teaspoon salt, cover with water and gently bring to boil. As soon as the chicken starts to simmer, remove the foam that will show up on top using a big spoon. It should take between 5-10 min. for you to scoop all the foam out. Continue simmering the chicken for about 40 min. turning it once so that it boils evenly. Never boil the chicken on high as it will dry out. This is the first important step of this meal.

Take chicken out, put aside and let it cool off a little bit. SAVE the broth. As soon as the chicken is cool enough to handle, remove the white meat from the bone and spread it evenly on the bottom of a 5-qt. glass baking dish. Take the two chicken legs and also place them in the pot. If you prefer you can take the dark meat off the bone, but you don't have to.

You can arrange the chicken meat in any way you like.

In a separate pan, heat the oil and stir fry the onion for about 6-8 min. Add rice and gently stir, add 1/2 teaspoon salt, parsley and savory. Make sure you constantly stir with a wooden spoon, otherwise your rice will burn. Add 1 cup of the chicken broth, stir gently and then add a second cup of the broth with stirring.

Pour the stir-fry rice mixture over the chicken pieces in the baking pot. Add more of the chicken broth. Mix slowly so that the rice is evenly spread in throughout the dish. There should be about one inch of broth over your chicken and rice mix (see picture). This is the second important step of this meal! If you don't add the proper amount of broth your rice will not fully cook, and if you add too much your casserole will remain soupy.

Put in preheated oven at 375 oF for 40 min. Remove from the oven and let the casserole stand for 10-20 min. Enjoy this dinner with your favorite vegetables.
