A great treat in Brazil and Portugal, the cheese bread (pão de queijo) is a great enjoyed recipe of mine. Friends and family go crazy over it. Goes great with morning or afternoon coffee, and makes a great snack. Its a hard cheesy gooey baked ball of cheese that really livens up the pallet. (Palate) These are gluten and wheat free.

INGREDIENTS:

  • 1 cup of oil
  • 2 cups of milk
  • 6 cups of sweet manioc starch flour (cassava, yuca, and tapioca work in varied quantities)
  • 1 spoon of salt
  • 4 eggs
  • 1-2 cups of Parmesan cheese (shredded) (try substituting other cheeses as well like mozzarella)

MODE OF PREPARATION:

in a pan, boil the milk, oil, and sweet manioc starch flour (slowly) together while stirring, forming a ball of dough, turn off the oven and let the dough rest for about 10-15 minutes and then add eggs and cheese, prepare to use your hands.

With your hands knead the dough on a cutting board with your hands like play dough until it stops sticking to your hands.

Form little balls about the size of your palm, get greased a cookie sheet and space the balls about an inch apart.

Bake at 375 degrees for 20 minutes or until a nice semi-hard crust on top.

PORTUGUESE

INGREDIENTES:

  • 1 xícara de óleo
  • 2 xícaras de leite
  • 6 xícaras de polvilho doce
  • 1 colher de sal
  • 4 ovos
  • 1-2 xícaras de queijo parmesão ralado a gosto

MODO DE PREPARO:

Primeiro ferva o leite e o óleo e o polvilho e deixe esfriar.

Depois de 10-15 minutos coloque os ovos e o queijo, continua misturando ate começar desgrudar.

Na mão pega a massa e amasse bem ate que saia das mãos, faça bolinhas.

Em uma forma, alinhe com óleo e leve ao forno, aqueça a 375 degraus (F) por 20 minutos ou até um pouco duro em cima.
