Vegetable Rotini Pasta Salad With Garlic Recipe

Rotini Pasta Salad
Rotini Pasta Salad | Source

If you are looking for a Pasta Salad that is a bit different than your regular pasta salad, you may want to try this one. There is a bit of a kick to the salad dressing giving it a spicy but not overpowering flavor. Lately I have been eating so many different salads, and I tend to get bored with the regular salads that I make, so today I came up with this one. If you do try it please come back and let me know how you liked it.

Ingredients

  • 1 box of Rotini Pasta cooked, drained and rinsed
  • 3/4 cup of chopped sweet onion
  • 1/2 of a green pepper chopped
  • 5 or 6 radishes sliced
  • 1 tomato cut into bite sized pieces
  • 10 baby carrots chopped
  • Broccoli may be added

Ingredients For The Salad Dressing

3 Tbs. Extra Virgin Olive Oil

3 Tbs. Red Wine Vinegar

1 Tbs. Dijon Mustard

2 Dashes of Worcestershire Sauce

2 Drops of Slap Ya Mama Cajun Pepper Sauce (can be substituted with any hot sauce)

2 Garlic Cloves

Instructions

  • Boil the pasta, drain and rinse. While the pasta is cooking cut up the onion, radishes, green pepper, tomato, carrots and broccoli. Put all the vegetables into a salad bowl. Add the pasta once it has cooled.
  • In a bowl or measuring cup measure out the oil, vinegar, Dijon mustard, Worcestershire sauce and Cajun pepper sauce.
  • Press two cloves of garlic into the mixture and whisk well blending all ingredients together. This can be made up ahead of time and refrigerated until you are ready to serve the salad.
  • Pour the dressing over the salad toss well and serve. Sprinkle with Slap Ya Mama Cajun Pepper or season with salt and pepper.

Hi Susan, I just created a recipes board on Pinterest to give it a try and I pinned this recipe of yours. Is that ok? Silly question since I'm new to Pinterest, can other Pinners see my boards? I'll have to take it slow and continue in the new year because I still have about 7 days to go with the 30 hubs in 30 days challenge...I still have to write my hub for today! Busy...busy. ;-)

Thanks and Regards,

Hi, Susan. I tried this Saturday night. I forgot to get the baby carrots but I added red bell pepper instead. It was delicious!

Thanks Susan, I am so sick of eating the same thing every night, I don't feel like the entire cook a dinner routine - too hot and I am too tired. With this you can eat for lunch the next day too. Goodm Job.

I love pasta salad. This is great. I sometimes like to add a tin of salmon, or tuna, or ham to it too.

I definitely don't eat enough, pasta, Susan and I am well aware of how beneficial it can be in a health context. This sounds delicious and strangely enough, I have all the ingredients bar the baby carrots already in the house. Definitely an omen that this is something I should try tonight! :)

NMLady, Thanks for that info. I never knew that about radishes before.

Radishes also help reduce mucous (sorry if this is TMI!!)

I.e. got allergies? eat radishes....

Plus they taste good and compliment so many foods.

Cardisa, Please let me know and thanks. I really like the new picture.

Susan, First time I have ever added Cajun pepper sauce to a salad dressing but just thought I would try it and it was good.

nightbear, I love radishes at this time of year. I can eat tons of them and never get sick of them. The heat did add some zip to the dressing.

Ruby, I just wish Pasta had a few less calories :)

Great idea to add some heat to the salad dressing. And I have only just been re introduced to radishes, I think I forgot I like them. Great recipe. thank you.

I would not have thought to add hot sauce or even Worcestershire sauce to a salad dressing. I love that. Great idea.

R Tallonim and NMLady, Thanks for the comments and for stopping by to read.

RH I use W.Sauce in my Caesar Salad dressing too. The nights I do not make a salad Al always says "What no salad?" Tonight he can have whats left of the Zippy Rotini pasta salad.

Yum! Funny - I'm sitting at the table trying to figure out what I should do before it's time to start supper;). I'll read your hub about supper! SUPER:). I really can't wait to try this - I so wonder how W. Sauce will taste in dressing. I love using red wine and Dijon but haven't heard that trick! I do make salad a ton! Tonight - tomato salad as a side:)

Thanks for another great idea!
