  2. 750 g pumpkin fresh orcanned Pumpkin ( half of a large one or one small pumpkin)
  3. large potato ( or kumara) sweet potato
  4. salt ( 1 tsp)- I also added half a tsp of curry powder too, and sometimes experimented with one or two other spices)
  5. Add just enough water toalmostcovering the pumpkin( or combo of vegetables). Bring to the boil, then simmer(approx 15-20mins),less if using canned pumpkin( follow times on can)
  6. Nutmeg to sprinkle once served but I always forgot.
  7. Coconut milk generic variety worked just as well as any others, and takes the soup from plain to gourmet easy peasy.

How To Make The Best Pumpkin Soup and Easy Pumpkin Muffins

Method Peel and chop pumpkin (or canned) and potatoes into same size pieces ,smaller the pieces will reduce cooking time ,include onions ,spices ,salt etc. Boil time approx 20mins , just check for tenderness as you would boiling potatoes.

Drainand SAVE juice (stock). Set aside Mash using hand masher , food processor , or hand held mixer until pulpy and well mashed . You may need to do this in batches depending on chosen method.

In a separate sized pot add 100 grams of butter on medium heat to melt , as it melts quickly throw in 3 tablespoons of flour , as this turns into a paste add one cup of milk to make a sauce ( roux).

(If you want to make this into Thai Pumpkin Soup ,add Spicy Thai Curry paste now) Recipe below.

Watch the heat you may need to adjust down. The pumpkin stock that you had set aside now add to the white sauce ,blend in. Add pumpkin puree and coconut milk ( one can) Blend well. All thats required now is to heat through , eat and enjoy!

Just a wee tip here ,if you feel you have too much pumpkin puree , take some aside and freeze ( any plastic container ,if no freezer bags) Do this before adding the coconut milk or the sauce as anything with milk in it does not freeze well ( separates an goes funny).

This would be a good hub for around Halloween and Thanksgiving as I am sure people are wondering what to do with their pumpkin feelings. Personally I hate cutting up a pumpkin and gutting it, and my sister annoyed me by keeping one in our house for seven months. She did not want me to cut it up and make something out of it, but by that point it became moldy. Next time around I might just make pumpkin soup with it first.

Eaglekiwi profile image

Eaglekiwi 7 years ago from -Oceania Author

Yes it would be great SP, originally my son asked me for the recipe and he is in NZ and its Winter there so thought once Id written it all up I might as well make it a Hub, yea the cutting up part sucks ,I did it for years ,now I will have to try the canned stuff ,n see how that goes.....awww arnt sisters fun!! 7mths ohhh wow , be growing its own penicillan by then, its own lil blankie...hahaha, yuk.

Yummy for those of us changing our food choices to less sugar and more vegetables. Not loosing weight but loosing acid from sugar.

Eaglekiwi profile image

Eaglekiwi 6 years ago from -Oceania Author

Lady G Thankyou for your health tip, sometimes I also used sweet potato 1/2 an 1/2 content, so as to use whatever I had most off ,or variety.. yer right-yummy!

Lady Guinevere profile image

Thanks. Since beginning this change we have tried some new things. My husband and I tried Spaghtti Squash for the first time (I have a hub on the recipe that I made up) and we found that we like it. Someone told me that butternut squash tasted similar to sweet potatoes so that will be our next adventure.

Nancy 6 years ago

Eagle, what is the easiest way to peel a pumpkin? I have a broken wrist, and it just took me 15 min to peel a very tiny slice of pumpkin... sure could use some help

Thanks, Nancy

Eaglekiwi profile image

Eaglekiwi 6 years ago from -Oceania Author

Hi Nancy

Sorry to hear about your wrist.

Cook the pumpkin with the skin on , an scoop out the pumpkin flesh once cooled down a little.

I hope that helps and you get well soon!

If cooking pumpkin from fresh state i.e not canned , then they will take around the same time as whole raw potatoes to cook (so long as proportions are kept even)

Kit 6 years ago

This soup sounds really yummy but is bland and out of the hundreds of pumpkin soup I've had over my lifetime the only one I haven't liked

Eaglekiwi profile image

Eaglekiwi 6 years ago from -Oceania Author

Thankyou for your comments although bland is not a word I have ever heard from my family ,if anything adding coconut or regular cream can be a little naughty for the 'diet conscious',however on a cold Winters day this easy pumpkin soup has been a favourite of everyone who has tried it.

Try adding a few shakes of curry powder (or to taste) for more taste if wanted.

Thankyou for your comments.

linda 5 years ago

I'm making this recipe right now, but you have not mentioned how much liquid to use when boiling the pumpkin and potatoes.

Eaglekiwi profile image

Eaglekiwi 5 years ago from -Oceania Author

Hi Linda

Just read your comment, and I do hope you added sufficent water (I will edit the recipe).

I usually add enough water to almost covering the pumpkin pieces/or combo of vegetables. I prefer to let steam cook the food and not cover the pumpkin with too much water as it tends to leaches out all the healthy nutrients.

I am sure your soup was delicious too !!
