Poach Cod fillet with a Mango Tomato Salsa

Today for me is clean out the refrigerator day of the things that have been in there for a few days that have to be cooked and the main item was some nice looking cod fillets that I brought a few days ago and just put them in the refrigerator so now I have to cook them. So as I am looking to see what is needed to be used up I came across some mango’s and tomatoes so I decided to pair these items to make one tasty entrée a Cod fillet with a Mango Tomato Salsa ‏that I want to share with you today.

Poach Cod fillet with a Mango Tomato Salsa

Ingredients

1 ripe mango peeled and diced

1 large Roma (plum) tomato, diced

1 Tablespoon of chopped green onion

1 Tablespoon of finely chopped jalapeno

1 Tablespoons of lime juice

2 teaspoons of imported extra virgin olive oil

4 – 4 ounce pieces of cod fillets

¼ teaspoon of sea salt

¼ teaspoon of white pepper

½ cup of chicken stock

Methods

To begin we are going to make the salsa, using a medium bowl combine the mango, tomato, onion, jalapeno, lime juice, 1 teaspoon of the oil, and pepper to taste. Wrap and place in the refrigerate until serving time.

Now grab you cod fillets and Sprinkle the tops of fillets evenly with sea salt and white pepper, and place on a large plate. Let stand 10 minutes so the salt and pepper can penetrate the cod fillets.

To begin preparing the cod fillets using a large nonstick skillet heat remaining 1 teaspoon oil over medium heat setting. Place the cod fillets, seasoned side down, in skillet and cook for 3 minutes on that side then flip over add your chicken to the pan and increase the heat to medium high and cook for an additional 4 to 5 minutes until the fish flakes with the touch of a fork.

Remove the cod fillets from the skillet to serving plates bring out your Mango Tomato Salsa and top the salsa on top of the cod and serve and enjoy.
