Potato Chip Cookies
This is a fun recipe that even my children love to make as well as eat. I let my kids crush the potato chips. This recipe is great for the end of the potato chip bag that has crushed chips to small to eat. You can also add to the recipe sometimes I add butterscotch or chocolate chips for an extra yummy cookie.
1 Pound Butter
1 Cup Sugar
3 ¼ Cups Flour
1 Teaspoon Vanilla
1 ½ Cups Coarsely Crushed Potato Chips (I prefer Lays)
Preheat oven to 300 degrees. Cream butter and sugar. Slowly blend in flour and then vanilla. Gently mix in potato chips by hand.
Drop dough by rounded teaspoon onto ungreased cookie sheet. Then flatten slightly with a fork.
Bake cookies for 15 – 20 minutes until barely brown.
Cool cookies totally. Sprinkle with powdered Sugar.
