- 4 cups cubed, cooked potatoes (or 2 bags frozen diced potatoes, thawed)
- 1/2 pound chopped broccoli (fresh or frozen)
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Preparation Instructions:
Preheat oven to 350 degrees. Combine all ingredients, stirring well to combine. Note: If using frozen broccoli, be sure to thaw and drain before starting to mix ingredients together. Bake for 30 minutes, or until casserole is hot and bubbly. If desired, garnish with additional shredded cheddar prior to serving.
Potato and Onion Casserole
Ingredients:
- 6 medium to potatoes, cooked and sliced
- 3 cups of sliced onion (yellow, red, or a mixture of the two varieties)
- 2 tablespoons of butter
- 1 can cream of mushroom soup
- 1/2 cup of water
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Preparation Instructions:
Preheat oven to 400 degrees. Melt the butter in a skillet and sauté the onions until brown and tender. Add soup, water, salt, and pepper. Place the potatoes in a casserole dish and cover with half the shredded cheddar cheese. Spread the onions out over the layer of potatoes and cheddar. Top the onions with the remaining cheese. Bake for 20 minutes, or until cheese is melted and casserole is heated through and bubbly.
