Lays Sriracha Potato Chips
The other day my wife came in to our catering kitchen with some bags in her hands from the grocery store and gave me a big bag of Lays potato chips the new ones the Sriracha chips, after finishing up my work in the kitchen I sat down at my desk and opened up my new bags a chips and when I tasted them they were pretty good as I ate a few more I realize that they were not a chip that I would go back and buy again but it was something that I liked about the flavor it was pretty good but not as a chip and that stuck in my mind all night.
The next day as I working to in my catering kitchen with some chicken I was still thinking about the flavor of the Sriracha......spicy but sweet really mellow in flavor but not bold enough for a chip but savory enough to blend as a added feature to something else then it hit me, I could use the Sriracha chips as a breading agent.
Using my food processor I opened a new bag of Sriracha chips the 9 1/2oz size and added to my processor then grind them very fine then I started to build a breading mixture using the lays sriracha potato chips and this is how I put it together to make Lays Sriracha Potato Chip Breading Mixture.
The Breading Mixture
1 bag of Lays Sriracha chips 9 1/2oz bag
4 cups of all purpose flour
1/3 teaspoon of garlic powder
1/3 teaspoon of sea salt
1/3 teaspoon of white pepper
Now that I made this mixture I put it to a test what I did was combine all of the ingredients, I took out 1 whole chicken and cut it up into pieces and placed in a bowl and poured a pint of butter milk over chicken.
While the chicken is in the butter milk I took out a dutch oven place it on the stove and filled it half way with vegetable oil and turn it on medium high heat to get the grease hot .
While the grease is getting hot take the chicken out of the butter milk make sure you shake the chicken off when you grease is hot place the chicken in the breading mixture shake off extra mixture and place the chicken in the hot grease and deep fry the chicken for 12-15 minutes until cook through then place on a plate lined with a paper towel to catch any extra grease that may come off the chicken then serve and enjoy.
Must say this again the sriracha taste to me was not there for a potato chip but the flavor profile was there for something else and when i made this breading mixture and used it on my chicken that Lays slogan came back to my mind........ "Betcha can't eat just one'' Try it I think you will agree.......Happy Eating.
