Today I wanted to do a little tex-mex cooking and today was the perfect day for it because I had a few rotisserie chickens left over from yesterday’s BBQ party that I had at my house so I decided to mix the leftover ingredients together to make me some tasty pulled chicken in chipotle tomato sauce that is called Tinga de Pollo that I am sure you’re going to love

Pulled Chicken in Chipotle Tomato Sauce

Ingredients

4 chipotle chilies in adobo sauce (can reduce amount to your preference)

2 cans of tomato soup (10.75oz)

2 cups of onions, diced

1 wholesome home rotisserie chicken

1 bag of tostadas

Garnish

Cacique queso fresco, crumbled

1 bunch of fresh cilantro, finely diced

Cacique crème Mexicana

Methods

Preheat pan over medium low heat grab you rotisserie chicken then pull off all the meat into small pieces and place to the side. Now puree chilies and tomato soup in a blender or food processor until fully blended. Place onions into skillet. Once onions are translucent, add in the pulled rotisserie chicken.

Now start by adding blended mixture to skillet; stir to combine all ingredients and let it simmer for 10 minutes. Serve chicken on top of each tostada, drizzle with crème Mexicana, lightly garnish with queso fresco and cilantro.
