Pumpkin Whole Wheat Bread

This pumpkin bread is full of flavor from fresh ground whole food ingredients like whole pumpkin, wheat berries, and flax seeds. Besides superior wholesome nutritional value, its taste is awesome!

Ingredients

  • 2 3/4 Cups Baked Pumpkin with skin and seeds pureed by Vitamix
  • 1 3/4 Cups Wheat Berries ground to whole wheat flour by Vitamix
  • 3 Large Eggs
  • 1/4 Cup Olive or Canola Oil
  • 1/4 Cup Milk
  • 3/4 Cup Flax Seeds ground by Vitamix
  • 1 Cup Raw Sugar
  • 2 teaspoon Cinnamon Powder
  • 1/2 teaspoon Nutmeg Powder
  • 1/2 teaspoon Ginger Powder
  • 1 3/4 teaspoon Baking Powder
  • 3/4 teaspoon Baking Soda
  • 3/4 teaspoon Salt
  • 3/4 Cup Walnuts


Mix all ingredients well and pour into a 7x11 inches pan. Bake at 350F for 50 minutes or until golden brown. Enjoy!

On one note, in this recipe I use as much whole food as possible for better nutritional value. I use whole pumpkin including skin and seeds. I use fresh ground wheat berries. Next time I buy pumpkin, I'm going to try this receipe. With all the herbs it might add more flavour. I've tried making dishes with it before but they doesn't taste nice.
